Resistance and resilience to naturally acquired gastro-intestinal (GI) nematode parasite infections (predominantly Haemonchus contortus) were studied in 1785 lambs born over six lambings (1991 to 1996) consisting of 212 Red Maasai, 311 Dorper and 1262 crossbred (Red Maasai-Dorper) lambs in the sub-humid coastal region of Kenya. These lambs were the progeny of 41 Dorper and 35 Red Maasai rams. Live weights (LWT), blood packed cell volume (PCV) and faecal egg counts (FEC) were recorded at 1- to 2-monthly intervals from birth until the lambs were about one year of age. Red Maasai were more resistant and resilient post weaning to infections with GI nematodes than Dorper lambs as shown by their significantly lower FEC and their significantly higher PCV, respectively. An increasing proportion of Red Maasai genes in the crossbred lambs was associated with decreased FEC and higher PCV, but there was no heterosis for logarithm-transformed FEC (LFEC) or PCV. From one month of age Red Maasai lambs were significantly lighter than Dorper lambs by about 1 kg, but Red Maasai lambs had significantly lower lamb mortality rate from birth to 12 months of age (proportionately 0·30 and 0·66, respectively). Heritability estimates from a repeated measures analysis for records taken at 6 and 8 months of age were 0·14 (s.e. 0·05) for PCV from an animal model and 0·12 (s.e. 0·05) for LFEC from a sire model. The heritability estimate for LFEC from a repeated measures analysis including the four measurements recorded between 6 and 12 months of age was significantly higher (P < 0·05) for Dorper-sired lambs (0·15, s.e. 0·05 for an animal model and 0·19, s.e. 0·07 for a sire model) than for Red Maasai-sired lambs (0·00 and 0·01, s.e. 0·02). The phenotypic and genetic correlations between PCV and LFEC were moderately to highly negative and averaged –0·34 and –0·81, respectively. None of the genetic correlation estimates between LWT and PCV and LWT and LFEC for lambs post weaning were significantly different from zero. The heritability estimates for PCV and LFEC have important implications for within-breed genetic improvement programmes: for the Red Maasai, improvement should concentrate on resilience (e.g. selection for high PCV); for the Dorper, selection should be feasible for both improved resistance (low FEC) and resilience (high PCV).

An evaluation was carried out over a 5-year period in 10 commercial flocks of Scottish Blackface, Scottish Half-bred and Mule ewes to evaluate 10 sire breeds: Border Leicester, Dorset Down, Hampshire Down, He de France, North Country Cheviot, Oxford Down, Southdown, Suffolk, Texel and Wensleydale. An average of 43 sires was used per sire breed.

The analysis involved a total of 3360 lambs of which one-third had the left side dissected. Sire breeds were compared when their progeny were slaughtered at the same estimated carcass subcutaneous fat proportion (approx. 120 g/kg).

Carcass weights were related to the adult body size of the sire breeds with a range of 4 kg between Southdown and Wensleydale crosses. Crosses by the conventional meat sire breeds tended to have higher daily carcass-weight and lean-tissue gains than those by Border Leicester and Wensleydale sires. Texel and Suffolk crosses did not differ significantly in carcass weight, daily carcass-weight gain, daily lean gain or age at slaughter (P > 0·05).

Significant sire-breed × dam-breed interactions were recorded for daily carcass-weight gain and daily lean gain (P < 0·05). Dorset Down and Southdown crosses tended to grow relatively faster when from Mule dams; Texel crosses grew relatively faster when from Blackface dams.

There was relatively little difference between sire breeds in visually assessed carcass conformation; all the means were within two points on a 15-point scale. Texel crosses had a higher carcass lean proportion than other crosses: their advantage over Suffolk crosses was 22 g/kg.

Carotenoid pigments are good biomarkers of grass-feeding in sheep. However, as grazing lambs may be concentrate-finished, we investigated the effect of concentrate finishing after grazing on the carotenoid concentration of fat in sheep, and its significance for discriminating lamb production systems. In experiment 1 with 32 lambs, four feeding treatments were compared: G = grazing, C = feeding a concentrate-based diet, GSC = short concentrate-finishing period after grazing, and GLC = long concentrate-finishing period after grazing. The concentrate supply was regulated to have similar average daily gain for all treatments. In experiment 2, 42 ewes were given a low carotenoid diet after pasture feeding, for 0, 8, 22, 42, 84 or 126 days. The feeding level was adjusted to maintain body weight and body condition score. The nature and concentration of carotenoids was analysed by HPLC on diets and lambs’ perirenal fat. The reflectance spectrum of perirenal fat was measured at slaughter. Lutein was the only carotenoid in lamb fat. In experiment 1, the intensity of light absorption by lutein was linearly related with its concentration in the fat (P < 0·001) and was negatively correlated with the duration of the finishing period. The design of experiment 2 avoided the confounding effect of fat gain during the finishing period and examined the effect of the duration of this period by itself. There was no effect of stall-feeding duration on the intensity of light absorption by carotenoids in the fat in experiment 2, demonstrating that the effect of stall-feeding duration in fattening lambs was mediated via a dilution of existing fat with whiter fat rather than through pigments coming out of the fat. The concentration of lutein and the intensity of its light absorption in the fat decreased with lamb body-weight gain during the finishing period (P < 0·01 and P < 0·05 respectively) and increased with plasma carotenoid content at the end of the grazing period (P < 0·001). Because of the inter-individual variability in carotenoid absorption, the use of the reflectance spectrum of the fat alone may cause some concentrate finished grazing lambs to be classified as C lambs shortly after the beginning of the stall-feeding period, whereas others may be considered as G lambs for a long period of time. However, the combined use of plasma carotenoid content at slaughter together with the reflectance spectrum of the fat improves reliability in the discrimination of grass-fed, concentrate-fed and concentrate-finished grazing lambs, by taking advantage of the differences in the rate of reduction in carotenoid concentration in blood and fat.

The objective of this study is to quantify the milk production response per cow and per hectare (ha) for an incremental stocking rate (SR) change, based on a meta-analysis of published research papers. Suitable experiments for inclusion in the database required a comparison of at least two SRs under the same experimental conditions in addition to details on experimental length and milk production results per cow and per ha. Each additional increased SR treatment was also described in terms of the relative milk production change per cow and per ha compared to the lower base SR (b_SR). A database containing 109 experiments of various lengths with 131 comparisons of SR was sub-divided into Type I experiments (common experimental lengths) and Type II experiments (variable experimental lengths). Actual and proportional changes in milk production according to SR change were analysed using linear mixed model procedures with study included as a random effect in the model. Low residual standard errors indicated a good precision of the predictive equations with the exception of proportional change in milk production per cow. For all milk yield variables analysed, the results illustrate that while production per cow is reduced, a strong positive relationship exists between SR and milk production per ha. An SR increase of one cow/ha resulted in a decrease in daily milk yield per cow of 7.4% and 8.7% for Type I and Type II data, respectively, whereas milk yield per ha increased by 20.1% and 19.6%, respectively. Within the Type II data set, a one cow/ha increase in SR also resulted in a 15.1% reduction in lactation length (equivalent to 42 days). The low predictability of proportional change in milk production per cow according to the classical SR definition of cows per ha over a defined period suggests that SR may be more appropriately defined in terms of the change in available feed offered per animal within each treatment.

The aim of this review is to compare the performance of different reproductive programs using natural service, estrus synchronization treatment before natural service (timed natural breeding (TNB)), artificial insemination (AI) following estrus detection and timed artificial insemination (TAI) in beef herds. It is well known that after parturition the beef cow undergoes a period of anestrous, when they do not exhibit estrus, eliminating the opportunity to become pregnant in the early postpartum by natural mating or by AI after detection of estrus. Hormonal stimulation is already a consistent and well-proven strategy used to overcome postpartum anestrus in beef herds. Basically, hormones that normally are produced during the estrous cycle of the cow can be administered in physiological doses to induce cyclicity and to precisely synchronize follicular growth, estrus and ovulation. Furthermore, two options of mating may be used after hormonal stimulation: natural service (i.e. utilization of bull service after synchronization, referred to as TNB) and TAI. These strategies improve the reproductive efficiency of the herds compared with natural service without estrus induction or synchronization. After the first synchronized service, the most common strategy adopted to get non-pregnant cows pregnant soon is the introduction of clean-up bulls until the end of the breeding season. However, methods to resynchronize non-pregnant cows after the first service are already well established and offer a potential tool to reduce the time for subsequent inseminations. Thus, the use of these technologies enable to eliminate the use of bulls by using resynchronization programs (i.e. two, three or four sequential TAI procedures). The dissemination of efficient reproductive procedures, such as TNB, TAI and Resynch programs, either isolated or in combination, enables the production of a greater quantity (obtaining increased pregnancy rates early in the breeding season) and quality (maximization of the use of AI with superior genetic sires) of beef calves. These technologies can contribute to improve the production efficiency, and consequently, improve livestock profitability.

To study genetic variation in meat quality traits measured by rapid methods, data were recorded between 2005 and 2008 on samples of M. longissimus dorsi (LD) in Landrace (n = 3838) and Duroc (n = 2250) pigs included in the Norwegian pig breeding scheme. In addition, ultimate pH levels in the glycolytic LD (loin muscle) and M. gluteus medius (GM, ham muscle), and in the oxidative m. gluteus profundus (GP, ham muscle) were recorded as an extended data set (n = 16 732 and n = 7456 for Landrace and Duroc, respectively) from 1998 to 2008. Data were analysed with a multi-trait animal model using AI-REML methodology. Meat from Duroc had considerably more intramuscular fat (IMF), less moisture and protein, appeared darker with higher colour intensity and had lower drip loss than meat from Landrace. The heritability estimates (s.e. 0.01 to 0.07) for pH in LD (0.19 and 0.27 for Landrace and Duroc, respectively), GM (0.12 and 0.22) and GP (0.19 and 0.38), drip loss (0.23 and 0.33), colour values: L* (lightness) (0.41 and 0.28), a* (redness) (0.46 and 0.43), b* (yellowness) (0.31 and 0.33), IMF (0.50 and 0.62), muscle moisture (0.31 and 0.50) and muscle protein content (0.40 and 0.54) in LD all demonstrated moderate-to-high genetic variation for these traits in both breeds. Near infrared spectroscopy and EZ-DripLoss are modern technologies used in this study for the determination of chemical components and drip loss in meat. These methods gave higher heritabilities than more traditional methods used to measure these traits. The estimated genetic correlations between moisture and IMF in Duroc, and pH and drip loss in Duroc were both −0.89. Interesting differences between the two breeds in numerical value of some genetic correlations were observed, probably reflecting the differences in physiology and selection history between Landrace and Duroc. The estimated genetic correlation between drip loss and pH was much stronger in Duroc than in Landrace (−0.89 and −0.63, respectively). This might be due to the high pH in Duroc, whereas Landrace had a lower pH closer to the iso-electric point for muscle proteins. The positive genetic correlation between the L* value in meat and IMF in Duroc (0.50) was an effect of differences in visible marbling, rather than meat colour. For Landrace, this correlation was negative (−0.20). IMF content showed favourable genetic correlations to drip loss (−0.36 and −0.35 for Landrace and Duroc, respectively).

Forty multiparous Holstein cows were used in a 16-week continuous design study to determine the effects of either selenium (Se) source, selenised yeast (SY) (derived from a specific strain of Saccharomyces cerevisiae CNCM I-3060) or sodium selenite (SS), or Se inclusion rate in the form of SY in the diets of lactating dairy cows on the Se concentration and speciation in blood, milk and cheese. Cows received ad libitum a total mixed ration (TMR) with a 1 : 1 forage : concentrate ratio on a dry matter (DM) basis. There were four diets (T1 to T4), which differed only in either source or dose of Se additive. Estimated total dietary Se for T1 (no supplement), T2 (SS), T3 (SY) and T4 (SY) was 0.16, 0.30, 0.30 and 0.45 mg/kg DM, respectively. Blood and milk samples were taken at 28-day intervals and at each time point there were positive linear effects of Se in the form of SY on the Se concentration in blood and milk. At day 112, blood and milk Se values for T1 to T4 were 177, 208, 248 and 279 ± 6.6 and 24, 38, 57 and 72 ± 3.7 ng/g fresh material, respectively, and indicate improved uptake and incorporation of Se from SY. In whole blood, selenocysteine (SeCys) was the main selenised amino acid and the concentration of selenomethionine (SeMet) increased with the increasing inclusion rate of SY. In milk, there were no marked treatment effects on the SeCys content, but Se source had a marked effect on the concentration of SeMet. At day 112, replacing SS (T2) with SY (T3) increased the SeMet concentration of milk from 36 to 111 ng Se/g and its concentration increased further to 157 ng Se/g dried sample as the inclusion rate of SY increased further (T4) to provide 0.45 mg Se/kg TMR. Neither Se source nor inclusion rate affected the keeping quality of milk. At day 112, milk from T1, T2 and T3 was made into a hard cheese and Se source had a marked effect on total Se and the concentration of total Se comprised as either SeMet or SeCys. Replacing SS (T2) with SY (T3) increased total Se, SeMet and SeCys content in cheese from 180 to 340 ng Se/g, 57 to 153 ng Se/g and 52 to 92 ng Se/g dried sample, respectively. The use of SY to produce food products with enhanced Se content as a means of meeting the Se requirements is discussed.

To sustainably contribute to food security of a growing and richer world population, livestock production systems are challenged to increase production levels while reducing environmental impact, being economically viable, and socially responsible. Knowledge about the sustainability performance of current livestock production systems may help to formulate strategies for future systems. Our study provides a systematic overview of differences between conventional and organic livestock production systems on a broad range of sustainability aspects and animal species available in peer-reviewed literature. Systems were compared on economy, productivity, environmental impact, animal welfare and public health. The review was limited to dairy cattle, beef cattle, pigs, broilers and laying hens, and to Europe, North America and New Zealand. Results per indicators are presented as in the articles without performing additional calculations. Out of 4171 initial search hits, 179 articles were analysed. Studies varied widely in indicators, research design, sample size and location and context. Quite some studies used small samples. No study analysed all aspects of sustainability simultaneously. Conventional systems had lower labour requirements per unit product, lower income risk per animal, higher production per animal per time unit, higher reproduction numbers, lower feed conversion ratio, lower land use, generally lower acidification and eutrophication potential per unit product, equal or better udder health for cows and equal or lower microbiological contamination. Organic systems had higher income per animal or full time employee, lower impact on biodiversity, lower eutrophication and acidification potential per unit land, equal or lower likelihood of antibiotic resistance in bacteria and higher beneficial fatty acid levels in cow milk. For most sustainability aspects, sometimes conventional and sometimes organic systems performed better, except for productivity, which was consistently higher in conventional systems. For many aspects and animal species, more data are needed to conclude on a difference between organic and conventional livestock production systems.

The effects of floor type and stocking density on leg weakness, osteochondrosis and claw disorders in slaughter pigs were studied. Three hundred pigs were housed in pens with either solid floors with plenty of straw, solid floors without straw or fully slatted floors at either high (0·65 m2 per pig) or low (1·2 m2 per pig) stocking density from 25 to 105 kg. In each pen half of the pigs were boars and half gilts of the breeds Landrace and Yorkshire ✕ Landrace crossbred. There was no difference in growth rate between the three floor types. The growth rate of the boars was higher at low compared with high stocking density, while no effect of stocking density was seen in the gilts. The prevalence of leg weakness and claw disorders was different for the various floor types, while no effect of floor type could be found on joint changes. With regard to leg weakness, slatted flooring was significantly worse than solid floors with or without straw for standing under position on hind legs, while pens with plenty of straw were significantly better than the other floor types with regard to stiff movement and forelegs turned out. A calculated sum of the nine leg weakness symptoms showed that pens with straw were the best followed by solid floor without straw, while slatted floors were the worst. Regarding claw disorders, solid floors without straw were the worst. High stocking density affected four leg weakness variables (buck-kneed forelegs, turned-out fore- and hind legs, standing under position on hind legs), one joint change and three claw disorders negatively. Boars scored worse than gilts with regard to one leg weakness trait and one claw disorder and thickening of cartilage in two joints. Differences between breeds differed for the examined variables. Claw hardness was affected by floor type with regard to medial claws, which were softer on slatted floors. The hind claws were softer than the foreclaws on the volar surface, while there was no difference between the hardness of the topside of the fore- and hind claws. Claw hardness was not affected by sex. In conclusion, it can be said that the examined floor types do not have the same effect on the different aspects of leg weaknesses and claw disorders. Thus, clinical leg problems are worst on slatted floors and best in pens with straw, but claw disorders are worst on solid floors without straw. Further, high stocking density specifically affects the clinical leg weaknesses and claw disorders. Joint changes were not affected by floor type or stocking density.

This study tested the hypothesis that late weaning and the availability of creep feed during the suckling period compared with early weaning, improves feed intake, decreases stress and improves the integrity of the intestinal tract. In this study with 160 piglets of 16 litters, late weaning at 7 weeks of age was compared with early weaning at 4 weeks, with or without creep feeding during the suckling period, on post-weaning feed intake, plasma cortisol (as an indicator of stress) and plasma intestinal fatty acid binding protein (I-FABP; a marker for mild intestinal injury) concentrations, intestinal morphology, intestinal (macro)molecular permeability and intestinal fluid absorption as indicators of small intestinal integrity. Post-weaning feed intake was similar in piglets weaned at 4 weeks and offered creep feed or not, but higher (P < 0.001) in piglets weaned at 7 weeks with a higher (P < 0.05) intake for piglets offered creep feed compared with piglets from whom creep feed was witheld. Plasma cortisol response at the day of weaning was lower in piglets weaned at 7 weeks compared with piglets weaned at 4 weeks, and creep feed did not affect cortisol concentration. Plasma I-FABP concentration was not affected by the age of weaning and creep feeding. Intestinal (macro)molecular permeability was not affected by the age of weaning and creep feeding. Both in uninfected and enterotoxigenic Escherichia coli-infected small intestinal segments net fluid absorption was not affected by the age of weaning or creep feeding. Creep feeding, but not the age of weaning, resulted in higher villi and increased crypt depth. In conclusion, weaning at 7 weeks of age in combination with creep feeding improves post-weaning feed intake and reduces weaning stress but does not improve functional characteristics of the small intestinal mucosa.

This study examined the relationship of residual feed intake (RFI) with digestion, body composition, carcass traits and visceral organ weights in beef bulls offered a high concentrate diet. Individual dry matter (DM) intake (DMI) and growth were measured in a total of 67 Simmental bulls (mean initial BW 431 kg (s.d.=63.7)) over 3 years. Bulls were offered concentrates (860 g/kg rolled barley, 60 g/kg soya bean meal, 60 g/kg molasses and 20 g/kg minerals per vitamins) ad libitum plus 0.8 kg grass silage DM daily for 105 days pre-slaughter. Ultrasonic muscle and fat depth, body condition score (BCS), muscularity score, skeletal measurements, blood metabolites, rumen fermentation and total tract digestibility (indigestible marker) were determined. After slaughter, carcasses and perinephric and retroperitoneal fat were weighed, carcasses were graded for conformation and fat score and weight of non-carcass organs, liver, heart, kidneys, lungs, gall bladder, spleen, reticulo-rumen full and empty and intestines full, were determined. The residuals of the regression of DMI on average daily gain (ADG), mid-test metabolic BW (BW0.75) and the fixed effect of year, using all animals, were used to compute individual RFI coefficients. Animals were ranked on RFI and assigned to high (inefficient), medium or low groupings. Overall mean ADG and daily DMI were 1.6 kg (s.d.=0.36) and 9.4 kg (s.d.=1.16), respectively. High RFI bulls consumed 7 and 14% more DM than medium and low RFI bulls, respectively (P<0.001). No differences between high and low RFI bulls were detected (P>0.05) for ADG, BW, BCS, skeletal measurements, muscularity scores, ultrasonic measurements, carcass weight, perinephric and retroperitoneal fat weight, kill-out proportion and carcass conformation and fat score. However, regression analysis indicated that a 1 kg DM/day increase in RFI was associated with a decrease in kill-out proportion of 20 g/kg (P<0.05) and a decrease in carcass conformation of 0.74 units (P<0.05). Weight of non-carcass organs did not differ (P>0.05) between RFI groups except for the empty weight of reticulo-rumen, which was 8% lighter (P=0.05) in low RFI compared with high RFI bulls. Regression analysis indicated that a 1 kg DM/day increase in RFI was associated with a 1 kg increase in reticulo-rumen empty weight (P<0.05). Of the visceral organs measured, the reticulo-rumen may be a biologically significant contributory factor to variation in RFI in beef bulls finished on a high concentrate diet.

The study compared using chemical components (i.e. crude protein (CP), neutral- and acid-detergent fibre or lignin (NDF, ADF and ADL) g/kg dry matter (DM), the in vitro digestibility (Tilley and Terry, 1963), the in situ (nylon bag) DM degradation (g/100 g DM) and gas production (ml/200 mg DM) techniques to predict voluntary daily intake (g DM per kg M0.75) and in vivo apparent DM digestibility (DMD) of 10 graminaceous hays individually offered ad libitum to four Merino male sheep. Gas production or DM degradation were determined after 6, 12, 24, 48, 72 or 96 h incubation and their characteristics described using the equation p = a + b (1 – e-ct). Intake and in vivo DMD of the hays were variable and poorly related (r = 0·52; P > 0·05). The in situ DM degradation was significantly (Y < 0·05) related to in vivo apparent DMD at 48 to 96 h incubation (i = 0·76 to 0·75) and to intake at 24 to 96 h (r = 0·71 to 0·75) incubation. However, fibre components, the in vitro digestibility or gas production were either related to daily intake or in vivo apparent DMD, but not to both on the same occasion. Accurate prediction of intake (r = 0·90; P < 0·05) and in vivo apparent DMD (r = 0·88; P < 0·069) were achieved using NDF, ADF, ADL and CP in a multiple regression. Using the (a + b) and the rate (c) of in situ DM degradation, both in vivo apparent DMD (r = 0·77; P < 0·05) and intake (r = 0·83; P < 0·05) were predicted with accuracy. However, using the (a + b) and (c) of gas production, only intake was predicted accurately (r = 0·87; P < 0·01). The lower performance of the gas test was attributed to the small contribution to gas production and higher buffering capacity resulting from protein fermentation. When data of the graminaceous and other data from leguminous hays were combined, the most accurate prediction of both intake and apparent digestibility was by using characteristics of in situ DM degradation followed by those of gas production. The latter was more accurate than using chemical components or the in vitro digestibility. Addition of CP in the multiple regression improved the prediction of intake and in vivo apparent DMD from characteristics of gas production. It was concluded that despite the need to overcome the problem of protein fermentation in the gas test, accurate prediction of both intake and apparent digestibility can be achieved simply from the degradation characteristics of foods.

Growth and survival of 3673 female and cryptorchid lambs representing the range of types (second cross, first cross and Merino) produced in the Australian lamb industry are reported. The lambs were sired by a selection of Poll Dorset (D; no. = 7), Texel (T; no. = 10), Border Leicester (BL; no. = 12) and Merino (M; no. = 12) rams and born to Border Leicester × Merino (BLM) and Merino (M) dams, which resulted in six lamb genotypes (D×BLM, T×BLM, D×M, T×M, BL×M and M×M). The second cross lambs (D×BLM, T×BLM) were heavier at birth, weaning and post-weaning and had higher growth rates, than first cross lambs (D×M, T×M, BL×M), which were higher than M×M lambs (P< 0·01). For post-weaning weight (cryptorchids at 156 days) second cross lambs were 4·2 (s.e. 0·3) kg heavier than comparable sired first cross lambs, with the BL×M 2·6 (s.e. 0·5) kg lighter than other first cross types and the MxM a further 4·2 (s.e. 0·6) kg lighter. The average advantage of D over T crosses was 1·0 kg for post-weaning weight, with greater variation amongst individual sires.

Lamb survival to weaning was 76% and it was affected by birth weight and birth type (P< 0·01). Sire breed had no significant effect on lamb survival, whereas lambs from BLM ewes had higher survival than those from M ewes (P< 0·01).

Overall the proportion of ewes lambing was 84% with a mean litter size of 1·77. There was no difference infertility between AI (thawed frozen semen and laparoscopic insemination) and natural (single sire) mating, although the M were higher than the BLM ewes (P< 0·01). Gestation length was 2·3 days shorter (P< 0·01) for BLM than M ewes and there was no difference between D and T sire breeds. There was little effect of birth type on gestation length but it increased with birth weight within birth type categories. Between year repeatability of gestation length for ewes was 0·33 (s.e. 0·05).

The reproductive efficiency of the entire sheep flock could be improved if ewe lambs go through puberty early and produce their first lamb at 1 year of age. The onset of puberty is linked to the attainment of critical body mass, and therefore we tested whether it would be influenced by genetic selection for growth rate or for rate of accumulation of muscle or fat. We studied 136 Merino ewe lambs with phenotypic values for depth of eye muscle (EMD) and fat (FAT) and Australian Sheep Breeding Values at post-weaning age (200 days) for live weight (PWT), eye muscle depth (PEMD) and fat depth (PFAT). First oestrus was detected with testosterone-treated wethers and then entire rams as the ewes progressed from 6 to 10 months of age. Blood concentrations of leptin and IGF-I were measured to test whether they were related to production traits and reproductive performance (puberty, fertility and reproductive rate). In total, 97% of the lambs reached first oestrus at average weight 39.4 ± 0.4 kg (mean ± s.e.m.) and age 219 days (range 163 to 301). Age at first oestrus decreased with increases in values for PWT (P < 0.001), and concentrations of IGF-I (P < 0.05) and leptin (P < 0.01). The proportion of ewe lambs that achieved puberty was positively related with increases in values for EMD (P < 0.01), FAT (P < 0.05) or PWT (P < 0.01), and 75% of the ewe lambs were pregnant at average weight 44.7 ± 0.5 kg and age 263 days (range 219 to 307). Ewe lambs that were heavier at the start of mating were more fertile (P < 0.001) and had a higher reproductive rate (P < 0.001). Fertility and reproductive rate were positively correlated with increases in values for EMD (P < 0.01), FAT (P < 0.05), PWT (P < 0.01) and leptin concentration (P < 0.01). Fertility, but not reproductive rate, increased as values for PFAT increased (P < 0.05). Leptin concentration increased with increases in values for EMD (P < 0.001), FAT (P < 0.001), PWT (P < 0.001), PEMD (P < 0.05) and PFAT (P < 0.05). Many of these relationships became non-significant when PWT or live weight was added to the statistical model. We conclude that selection for genetic potential for growth can accelerate the onset of puberty and increase fertility and reproductive rate of Merino ewe lambs. The metabolic hormones, IGF-I and leptin, might act as a physiological link between the growing tissues and the reproductive axis.

A short term enteric methane emission measurement is not identical to a measure of daily methane production (DMP) made in a respiration chamber (RC). While RC curtail most variation except that from quantity and composition of feed supplied, all short-term measurements contain additional sources of variation. The points of difference can include measurement time(s) relative to feeding, feed intake before measurement, animal behaviour in selection of diet and level of activity before measurement. For systems where a short-term emission measurement is made at the same time in the daily feeding cycle (e.g. during twice-daily milking) scaling up of short-term emission rates to estimate DMP is feasible but the scaling coefficient(s) will be diet dependent. For systems such as GreenFeed where direct emission rates are measured on occasion throughout day and night, no scaling up may be required to estimate DMP. For systems where small numbers of emission measures are made, and there is no knowledge of prior feed intake, such as for portable accumulation chambers, scaling to DMP is not currently possible. Even without scaling up to DMP, short-term measured emission rates are adequate for identifying relative emission changes induced by mitigation strategies and could provide the data to support genetic selection of ruminants for reduced enteric emissions.

Mammalian milk or colostrum contains up to 10% of carbohydrate, of which free lactose usually constitutes more than 80%. Lactose is synthesized within lactating mammary glands from uridine diphosphate galactose (UDP-Gal) and glucose by a transgalactosylation catalysed by a complex of β4-galactosyltransferase and α-lactalbumin (α-LA). α-LA is believed to have evolved from C-type lysozyme. Mammalian milk or colostrum usually contains a variety of oligosaccharides in addition to free lactose. Each oligosaccharide has a lactose unit at its reducing end; this unit acts as a precursor that is essential for its biosynthesis. It is generally believed that milk oligosaccharides act as prebiotics and also as receptor analogues that act as anti-infection factors. We propose the following hypothesis. The proto-lacteal secretions of the primitive mammary glands of the common ancestor of mammals contained fat and protein including lysozyme, but no lactose or oligosaccharides because of the absence of α-LA. When α-LA first appeared as a result of its evolution from lysozyme, its content within the lactating mammary glands was low and lactose was therefore synthesized at a slow rate. Because of the presence of glycosyltransferases, almost all of the nascent lactose was utilized for the biosynthesis of oligosaccharides. The predominant saccharides in the proto-lacteal secretions or primitive milk produced by this common ancestor were therefore oligosaccharides rather than free lactose. Subsequent to this initial period, the oligosaccharides began to serve as anti-infection factors. They were then recruited as a significant energy source for the neonate, which was achieved by an increase in the synthesis of α-LA. This produced a concomitant increase in the concentration of lactose in the milk, and lactose therefore became an important energy source for most eutherians, whereas oligosaccharides continued to serve mainly as anti-microbial agents. Lactose, in addition, began to act as an osmoregulatory molecule, controlling the milk volume. Studies on the chemical structures of the milk oligosaccharides of a variety of mammalian species suggest that human milk or colostrum is unique in that oligosaccharides containing lacto-N-biose I (LNB) (Gal(β1 → 3)GlcNAc, type I) predominate over those containing N-acetyllactosamine (Gal(β1 → 4)GlcNAc, type II), whereas in other species only type II oligosaccharides are found or else they predominate over type I oligosaccharides. It can be hypothesized that this feature may have a selective advantage in that it may promote the growth of beneficial colonic bacteria, Bifidobacteria, in the human infant colon.

This review deals with the behaviour of river buffaloes (Bubalus bubalis), in confinement and in extensive conditions, also focusing on the effects of different housing and rearing conditions on their welfare. The behavioural repertoire expressed by buffaloes in extensive and intensive conditions is similar to those displayed by other domestic ruminants. However, through natural selection, buffaloes have also acquired several morphological, physiological and behavioural (i.e. wallowing) adaptations to hot climatic conditions. Buffaloes kept in intensive conditions and having no access to pasture and water for wallowing extend their periods of idling and are less often involved in investigative activities. Confinement is also associated with a reduction of space; however, no specific studies have been carried out to determine the specific requirements of this species. Space restriction can adversely affect various aspects of buffalo welfare, such as health (increased levels of lesions and injuries), social behaviour (increased number of agonistic interactions) and heat dissipation. The buffaloes, originating from tropical areas, are well adapted to large variations in food availability and quality, and to dietetic unbalances. As to human animal relationship, it has been observed that the incidence of stepping and kicking behaviour of buffaloes in the milking parlour is positively correlated with the frequency of oxytocin injections, whereas the frequency of positive stockperson interactions with the animals such as talking quietly, petting and gentle touching are negatively correlated with the number of kicks during milking. Data from farms where both dairy cattle and buffaloes are present show that avoidance distance measured in the pen is lower in buffaloes than in cattle. This may be attributed to the fact that buffaloes are generally recognised to be curious animals. Finally, the effects of different farming practices on animal-related indicators are described. However, these measures should be integrated into a monitoring protocol, such as the Welfare Quality® scheme, to reliably assess buffalo welfare in the current intensive farming conditions.

Carcass and meat quality traits were studied in 94 barrows of known HAL-1843 genotype (homozygote - - and heterozygote - +) from three crosses slaughtered at 90 kg and 120 kg live weight. Crosses A and B were produced from sires of which 0·5 of the genes were from a heavy-muscled × Large White line and 0·5 from pure Pietrain (A) or Duroc (B). Sows for both A and B were from a hyperprolific Large White × Landrace line and this latter line produced the pigs for cross C (control). The carcasses from cross A which were sired from boars having 0·75 of their genotype from heavy-muscled genetic lines had higher killing-out proportion, better conformation scores, greater loin depth and loin area, less carcass length and bone content, and greater lean proportion compared with cross C. The carcasses from cross B, with roughly 0·25 of Duroc genes had a significantly higher backfat thickness than either cross A or C. However their composition was not significantly different from C, since the higher backfat was counter-balanced by their better conformation. Carcass and lean weight distribution was more favourable in crosses A and B, which had significantly higher economic yields than cross C. The halothane genotype did not have a significant effect on fatness and carcass composition, although the heterozygote showed a significantly greater muscle depth. In addition, no significant effect of the halothane gene on carcass and lean weight distribution was observed. In relation to the light group of carcasses (72·8 (s.e. 4·4) kg), the heavy group (100·1 (s.e. 2·7) kg) had greater killing-out proportion, better conformation, longer carcasses, higher fatness and greater loin depth and area. These genetic lines showed a 9·6 g/kg increase in fat and a 6·1 g/kg decrease in lean for every 10 kg of increasing slaughter weight. With the slaughter weight increase the longissimus dorsi muscle became less pale due to a higher muscle pigment concentration, and the backfat had a higher proportion of oleic and lower proportion of linoleic and palmitic fatty acids. The halothane genotype had a significant effect on meat quality. The heterozygote produced much paler, softer and more exudative meat. However, the effect of cross and carcass weight was not significant for meat quality measurements determining pale, soft and exudative meat.

Aggression when pigs are mixed into new social groups has negative impacts on welfare and production. Aggressive behaviour is moderately heritable and could be reduced by genetic selection. The possible wider impacts of selection for reduced aggressiveness on handling traits and activity in the home pen were investigated using 1663 male and female pedigree pigs (898 purebred Yorkshire and 765 Yorkshire × Landrace). Aggressive behaviour was observed over 24 h after pigs were mixed at 10 weeks of age into groups balanced for unfamiliarity and weight. Aggression was highly heritable (duration of involvement in reciprocal fighting h2 = 0.47 ± 0.03, and duration of delivering one-sided aggression h2 = 0.34 ± 0.03). Three weeks after mixing, home pen inactivity (indicated by the frequency of lying) was observed over 24 h. Inactivity was weakly heritable (h2 = 0.05 ± 0.01) but showed no significant genetic association with aggression. Pigs’ behaviour during handling by humans was assessed on entry to, whilst inside and on exit from a weigh crate at both mixing and end of test at 22 weeks. Pigs were generally easy to handle, moving easily into and out of the crate. Scores indicating ‘very difficult to move’ were rare. Handling scores at weighing were weakly heritable (h2 = 0.03 to 0.17), and moderately correlated across the two weighings (rg = 0.28 to 0.76). Aggressive behaviour at mixing was genetically associated with handling at the end of test weighing: pigs that fought and delivered one-sided aggression had handling scores indicating more active behaviour at weighing (e.g. moving quickly into the crate v. fighting rg = 0.41 ± 0.05 and v. bullying rg = 0.60 ± 0.04). Also, there was a genetic association between receiving one-side aggression at mixing and producing high-pitched vocalisations in the weigh crate (rg = 0.78 ± 0.08). Correlated behavioural responses occurring across different challenging situations (e.g. social mixing and human handling) have been described by the concept of animal temperament (also known as coping styles, personality or behavioural syndromes), but this has rarely been demonstrated at the genetic level in farm animals. These findings may have practical implications for the development of breeding programmes aimed at altering animal temperament. Breeding to reduce aggression could result in some reduction in activity at weighing. This would have consequences for animal production, because pigs which are inactive at weighing take longer to move into and out of the weigh crate, and perhaps also for animal welfare.

The establishment of food preferences and aversions determines the modulation of eating behaviour and the optimization of food intake. These phenomena rely on the learning and memory abilities of the organism and depend on different psychobiological mechanisms such as associative conditionings and sociocultural influences. After summarizing the various behavioural and environmental determinants of the establishment of food preferences and aversions, this paper describes several issues encountered in human nutrition when preferences and aversions become detrimental to health: development of eating disorders and obesity, aversions and anorexia in chemotherapy-treated or elderly patients and poor palatability of medical substances and drugs. Most of the relevant biomedical research has been performed in rodent models, although this approach has severe limitations, especially in the nutritional field. Consequently, the final aim of this paper is to discuss the use of the pig model to investigate the behavioural and neurophysiological mechanisms underlying the establishment of food preferences and aversions by reviewing the literature supporting analogies at multiple levels (general physiology and anatomy, sensory sensitivity, digestive function, cognitive abilities, brain features) between pigs and humans.
