Optimizing phosphorus (P) utilization in pigs requires improving our capacity to predict the amount of P absorbed and retained, with the main modulating factors taken into account, as well as precisely determining the P requirements of the animals. Given the large amount of published data on P utilization in pigs, a meta-analysis was performed to quantify the impact of the different dietary P forms, calcium (Ca) and exogenous phytases on the digestive and metabolic utilization criteria for dietary P in growing pigs. Accordingly, the amount of phytate P (PP) leading to digestible P (g/kg) was estimated to be 21%, compared with 73% for non-phytate P (NPP) from plant ingredients and 80% for NPP from mineral and animal ingredients (P < 0.001). The increase in total digestible dietary P following the addition of microbial phytase (PhytM) from Aspergillus niger (P < 0.001) was curvilinear and about two times higher than the increase following the addition of plant phytase, which leads to a linear response (P < 0.001). The response of digestible P to PhytM also depends on the amount of substrate, PP (PhytM2 × PP, P < 0.001). The digestibility of dietary P decreased with dietary Ca concentration (P < 0.01) independently of phytase but increased with body weight (BW, P < 0.05). Although total digestible dietary P increased linearly with total NPP concentration (P < 0.001), retained P (g/kg), average daily gain (ADG, g/day) and average daily feed intake (ADFI, g/day) increased curvilinearly (P < 0.001). Interestingly, whereas dietary Ca negatively affected P digestibility, the effect of dietary Ca on retained P, ADG and ADFI depended on total dietary NPP (NPP × Ca, P < 0.01, P < 0.05 and P < 0.01, respectively). Increasing dietary Ca reduced retained P, ADG and ADFI at low NPP levels, but at higher NPP concentrations it had no effect on ADG and ADFI despite a positive effect on retained P. Although the curvilinear effect of PhytM on digestible P increased with PP (P < 0.001), this effect was lessened by total NPP for ADG and ADFI (PhytM × NPP and PhytM2 × NPP, P < 0.05) and depended on both total NPP and Ca for retained P (PhytM2 × NPP × Ca, P < 0.01). This meta-analysis improves our understanding of P utilization, with major modulating factors taken into account. The information generated will be useful for the development of robust models to formulate environmentally friendly diets for growing pigs.

Changes in the drinking behaviour of pigs may indicate health, welfare or productivity problems. Automated monitoring and analysis of drinking behaviour could allow problems to be detected, thus improving farm productivity. A high frequency radio frequency identification (HF RFID) system was designed to register the drinking behaviour of individual pigs. HF RFID antennas were placed around four nipple drinkers and connected to a reader via a multiplexer. A total of 55 growing-finishing pigs were fitted with radio frequency identification (RFID) ear tags, one in each ear. RFID-based drinking visits were created from the RFID registrations using a bout criterion and a minimum and maximum duration criterion. The HF RFID system was successfully validated by comparing RFID-based visits with visual observations and flow meter measurements based on visit overlap. Sensitivity was at least 92%, specificity 93%, precision 90% and accuracy 93%. RFID-based drinking duration had a high correlation with observed drinking duration (R 2=0.88) and water usage (R 2=0.71). The number of registrations after applying the visit criteria had an even higher correlation with the same two variables (R 2=0.90 and 0.75, respectively). There was also a correlation between number of RFID visits and number of observed visits (R 2=0.84). The system provides good quality information about the drinking behaviour of individual pigs. As health or other problems affect the pigs’ drinking behaviour, analysis of the RFID data could allow problems to be detected and signalled to the farmer. This information can help to improve the productivity and economics of the farm as well as the health and welfare of the pigs.

European conformation and fat grades are a major factor determining carcass value throughout Europe. The relationships between these scores and sensory scores were investigated. A total of 3786 French, Polish and Irish consumers evaluated steaks, grilled to a medium doneness, according to protocols of the ‘Meat Standards Australia’ system, from 18 muscles representing 455 local, commercial cattle from commercial abattoirs. A mixed linear effects model was used for the analysis. There was a negative relationship between juiciness and European conformation score. For the other sensory scores, a maximum of three muscles out of a possible 18 demonstrated negative effects of conformation score on sensory scores. There was a positive effect of European fat score on three individual muscles. However, this was accounted for by marbling score. Thus, while the European carcass classification system may indicate yield, it has no consistent relationship with sensory scores at a carcass level that is suitable for use in a commercial system. The industry should consider using an additional system related to eating quality to aid in the determination of the monetary value of carcasses, rewarding eating quality in addition to yield.

A database built from 95 experiments with 303 treatments was used to quantify the ruminal biohydrogenation (BH) of fatty acids (FA), efficiency of microbial protein synthesis (EMPS), duodenal flow and intestinal absorption of total FA and of FA with 12 to 18 C units, in response to variations in dietary FA content, source or technological treatment of fat supplement. Flows of FA were expressed relative to dry matter intake (DMI) to compile data from bovine and ovine species. BH tended to increase curvilinearly with FA intake, whereas dietary FA did not affect EMPS. A linear relationship between FA intake and duodenal flow of total FA was obtained, with a coefficient of 0.75 ± 0.06 g duodenal FA/kg DMI for each g FA intake/kg DMI. Between experiments, positive balances of total FA (intake – duodenum) were related to low EMPS. Relationships between duodenal flows of FA with 12 to 18 C units and their respective intakes were linear, with a coefficient that increased with the number of C units. Duodenal flow of bacterial FA was linearly related to FA intake (coefficient 0.33 ± 0.13), whereas contribution of bacterial lipid to duodenal flow decreased as FA intake increased. For each FA with 12 to 16 C units, prediction of FA absorption from its respective duodenal flow was linear. For total FA and FA with 18 C units, apparent absorption levelled off at high duodenal flows. All these relationships were discussed according to current knowledge on microbial metabolism in the rumen and on the intestinal digestibility of FA in the intestine.

The physical and chemical composition of sows was determined at first mating (no. = 6), weaning the first litter (12) and 14 days after weaning the fourth litter (24). The sows were from 108 Large White/Landrace Fl hybrid gilts allocated in a factorial arrangement according to two levels of subcutaneous fatness at parturition (12 v. 22 mm P2), two levels of lactation feeding (3 v. 7 kg) and two sizes of sucking litter (six v. 10). Treatments significantly influenced the composition of dissected carcass fat and chemical lipid, but not composition of dissected lean and chemical protein. The final body protein mass of well fed sows at the termination of parity 4 was 41 kg, and the total content of gross energy (GE) in excess of 3000 MJ, with an average of 12·4 MJ GE per kg live weight; equivalent values for the less well fed sows were 33 kg and 9·4 MJ GE per kg live weight respectively. The weights of chemical lipid and protein could be predicted from the equations: lipid (kg) = -20·4 (s.e. 4·5) + 0·21 (s.e. 0·02) live weight + 1·5 (s.e. 0·2) P2; protein (kg) = -2·3 (s.e. 1·6) + 0·19 (s.e. 0·01) live weight - 0·22 (s.e. 0·07) P2. On average, sows lost 9 kg lipid and 3 kg protein in the course of the 28-day lactation; these being proportionately about 0·16 and 0·37 of the live-weight losses respectively. Maternal energy requirement for maintenance was estimated as 0·50 MJ digestible energy (DE) per kg M0·75, while the efficiency of use of DE for energy retention was 0·28.

Livestock farmers in Sweden usually grow feed grains for livestock but import protein feed from outside Sweden. Aside from the economic implications, some environmental issues are associated with this practice. We used life cycle assessment to evaluate the impact of local protein feed production on land use and greenhouse gas emissions, compared with the use of imported protein feed, for pig meat and dairy milk produced in Sweden. Our results showed that local production reduced greenhouse gas emissions by 4.5% and 12%, respectively, for pigs and dairy cows. Land use for feed production in Sweden increased by 11% for pigs and 25% for dairy cows, but total land use decreased for pig production and increased for dairy milk production. Increased protein feed cultivation in Sweden decreased inputs needed for animal production and improved some ecological processes (e.g. nutrient recycling) of the farm systems. However, the differences in results between scenarios are relatively small and influenced to an extent by methodological choices such as co-product allocation. Moreover, it was difficult to assess the contribution of greenhouse emissions from land use change. The available accounting methods we applied did not adequately account for the potential land use changes and in some cases provided conflicting results. We conclude that local protein feed production presents an opportunity to reduce greenhouse gas emissions but at a cost of increasing land occupation in Sweden for feed production.

The influence of maternal and genetic factors on the size of lambs at birth and on their gestation length has been studied from the results of two experiments involving the transfer of fertilised eggs from one breed of sheep to another. In the first experiment, eggs were transferred reciprocally between old ewes of the large Lincoln breed and of the small Welsh Mountain breed. Results are based on 20 transfer lambs and 14 normally born singles. In the second experiment, 35 pure Lincoln and 28 pure Welsh lambs were born as a result of transferring eggs into 18-month-old nulliparous Scottish Blackface sheep.

The breed type of the lamb was found to be the most important factor influencing weight and cannon length at birth, although maternal-foetal interactions were present. As the maternal environment became poorer, genotypic differences remained distinct but decreased in magnitude. The maternal environment provided by 4th parity Lincoln ewes, if judged by lamb's size at birth, was better than that provided by 4th parity Welsh ewes, and this in turn was better than that provided by 1st parity Blackfaces. Lincoln and Welsh lambs in the same maternal environment differed in average birth weight by 5·7, 3·8 and 3·0 1b. respectively in the Lincoln, Welsh and 1st parity Blackface maternal environments. Lincoln and Welsh lambs, each in their own normal maternal environment, differed by 6·5 lb. The maternal influence on cannon length was similar but small. Gestation length of Lincoln lambs in Welsh recipients was almost 4 days shorter than that of Welsh lambs in Lincoln recipients. In the Blackface maternal environment, Lincoln and Welsh lambs differed little in gestation length but males were, on average, carried about a day longer than were females.

At the individual level, weight of (Blackface) recipient ewe had a somewhat greater effect on lamb's size than had weight of (Lincoln or Welsh) donor ewe. The magnitudes of these ‘genetic’ and ‘maternal’ effects were comparable with those found at the level of group means; even so, donor's and recipient's weight together accounted for only a small part of the individual variation in lamb's size about the group means.

It was concluded that a ewe was able to respond to progressively greater demands made by a lamb or lambs of progressively larger (combined) potential size—but in accordance with the law of diminishing returns—and that the upper limit of maternal accommodation must be considerable. By contrast, the upper limit of mean genetic size at birth appears to be not far above the mean size of single lambs born to their natural mothers in good condition. A model has been constructed from which mean birth weight of lambs can be predicted.

In breeding programs, robustness of animals and uniformity of end product can be improved by exploiting genetic variation in residual variance. Residual variance can be defined as environmental variance after accounting for all identifiable effects. The aims of this study were to estimate genetic variance in residual variance of body weight, and to estimate genetic correlations between body weight itself and its residual variance and between female and male residual variance for broilers. The data sets comprised 26 972 female and 24 407 male body weight records. Variance components were estimated with ASREML. Estimates of the heritability of residual variance were in the range 0.029 (s.e. = 0.003) to 0.047 (s.e. = 0.004). The genetic coefficients of variation were high, between 0.35 and 0.57. Heritabilities were higher in females than in males. Accounting for heterogeneous residual variance increased the heritabilities for body weight as well. Genetic correlations between body weight and its residual variance were −0.41 (s.e. = 0.032) and −0.45 (s.e. = 0.040), respectively, in females and males. The genetic correlation between female and male residual variance was 0.11 (s.e. = 0.089), indicating that female and male residual variance are different traits. Results indicate good opportunities to simultaneously increase the mean and improve uniformity of body weight of broilers by selection.

Extensive genetic progress has been achieved in dairy cattle populations on many traits of economic importance because of efficient breeding programmes. Success of these programmes has relied on progeny testing of the best young males to accurately assess their genetic merit and hence their potential for breeding. Over the last few years, the integration of dense genomic information into statistical tools used to make selection decisions, commonly referred to as genomic selection, has enabled gains in predicting accuracy of breeding values for young animals without own performance. The possibility to select animals at an early stage allows defining new breeding strategies aimed at boosting genetic progress while reducing costs. The first objective of this article was to review methods used to model and optimize breeding schemes integrating genomic selection and to discuss their relative advantages and limitations. The second objective was to summarize the main results and perspectives on the use of genomic selection in practical breeding schemes, on the basis of the example of dairy cattle populations. Two main designs of breeding programmes integrating genomic selection were studied in dairy cattle. Genomic selection can be used either for pre-selecting males to be progeny tested or for selecting males to be used as active sires in the population. The first option produces moderate genetic gains without changing the structure of breeding programmes. The second option leads to large genetic gains, up to double those of conventional schemes because of a major reduction in the mean generation interval, but it requires greater changes in breeding programme structure. The literature suggests that genomic selection becomes more attractive when it is coupled with embryo transfer technologies to further increase selection intensity on the dam-to-sire pathway. The use of genomic information also offers new opportunities to improve preservation of genetic variation. However, recent simulation studies have shown that putting constraints on genomic inbreeding rates for defining optimal contributions of breeding animals could significantly reduce achievable genetic gain. Finally, the article summarizes the potential of genomic selection to include new traits in the breeding goal to meet societal demands regarding animal health and environmental efficiency in animal production.

A grazing experiment was carried out to study the concentration of phyto-oestrogens in herbage for cattle and in milk during two periods (May and June). Forty-eight Danish Holstein cows were divided into four groups with four treatment diets; white clover, red clover, lucerne and chicory-rich pastures. Each experimental period lasted 15 days. Herbage samples from the first day and individual milk samples from the last day of the experimental period were analysed for phyto-oestrogens using LC-MS technique. The total concentration of phyto-oestrogens was 21 399 mg/kg dry matter (DM) for red clover and 238 to 466 mg/kg DM for the other three herbages mainly due to a much higher concentration of biochanin A, formononetin and glycitein in red clover. In the milk, the total concentration of phyto-oestrogens was 253 to 397 μg/l for red clover milk and 56 to 91 μg/l in the milk from the other three treatments. This was especially due to a higher concentration of equol, daidzein and formononetin in the red clover milk. The concentration of biochanin A was significantly higher in milk from the red clover treatment in May while no differences were observed in June. Enterodiol was similar across treatments while the concentration of enterolactone was significantly lower for red clover milk compared with the other treatments. Of the tested pastures, red clover appears to have the highest concentration and to be the best source of phyto-oestrogens, especially equol, in bovine milk.

Lactoferrin (LTF) is a milk glycoprotein favorably associated with the immune system of dairy cows. Somatic cell count is often used as an indicator of mastitis in dairy cows, but knowledge on the milk LTF content could aid in mastitis detection. An inexpensive, rapid and robust method to predict milk LTF is required. The aim of this study was to develop an equation to quantify the LTF content in bovine milk using mid-infrared (MIR) spectrometry. LTF was quantified by enzyme-linked immunosorbent assay (ELISA), and all milk samples were analyzed by MIR. After discarding samples with a coefficient of variation between 2 ELISA measurements of more than 5% and the spectral outliers, the calibration set consisted of 2499 samples from Belgium (n = 110), Ireland (n = 1658) and Scotland (n = 731). Six statistical methods were evaluated to develop the LTF equation. The best method yielded a cross-validation coefficient of determination for LTF of 0.71 and a cross-validation standard error of 50.55 mg/l of milk. An external validation was undertaken using an additional dataset containing 274 Walloon samples. The validation coefficient of determination was 0.60. To assess the usefulness of the MIR predicted LTF, four logistic regressions using somatic cell score (SCS) and MIR LTF were developed to predict the presence of mastitis. The dataset used to build the logistic regressions consisted of 275 mastitis records and 13 507 MIR data collected in 18 Walloon herds. The LTF and the interaction SCS × LTF effects were significant (P < 0.001 and P = 0.02, respectively). When only the predicted LTF was included in the model, the prediction of the presence of mastitis was not accurate despite a moderate correlation between SCS and LTF (r = 0.54). The specificity and the sensitivity of models were assessed using Walloon data (i.e. internal validation) and data collected from a research herd at the University of Wisconsin – Madison (i.e. 5886 Wisconsin MIR records related to 93 mastistis events – external validation). Model specificity was better when LTF was included in the regression along with SCS when compared with SCS alone. Correct classification of non-mastitis records was 95.44% and 92.05% from Wisconsin and Walloon data, respectively. The same conclusion was formulated from the Hosmer and Lemeshow test. In conclusion, this study confirms the possibility to quantify an LTF indicator from milk MIR spectra. It suggests the usefulness of this indicator associated to SCS to detect the presence of mastitis. Moreover, the knowledge of milk LTF could also improve the milk nutritional quality.

Current feed evaluation systems for dairy cattle aim to match nutrient requirements with nutrient intake at pre-defined production levels. These systems were not developed to address, and are not suitable to predict, the responses to dietary changes in terms of production level and product composition, excretion of nutrients to the environment, and nutrition related disorders. The change from a requirement to a response system to meet the needs of various stakeholders requires prediction of the profile of absorbed nutrients and its subsequent utilisation for various purposes. This contribution examines the challenges to predicting the profile of nutrients available for absorption in dairy cattle and provides guidelines for further improved prediction with regard to animal production responses and environmental pollution.

The profile of nutrients available for absorption comprises volatile fatty acids, long-chain fatty acids, amino acids and glucose. Thus the importance of processes in the reticulo-rumen is obvious. Much research into rumen fermentation is aimed at determination of substrate degradation rates. Quantitative knowledge on rates of passage of nutrients out of the rumen is rather limited compared with that on degradation rates, and thus should be an important theme in future research. Current systems largely ignore microbial metabolic variation, and extant mechanistic models of rumen fermentation give only limited attention to explicit representation of microbial metabolic activity. Recent molecular techniques indicate that knowledge on the presence and activity of various microbial species is far from complete. Such techniques may give a wealth of information, but to include such findings in systems predicting the nutrient profile requires close collaboration between molecular scientists and mathematical modellers on interpreting and evaluating quantitative data. Protozoal metabolism is of particular interest here given the paucity of quantitative data.

Empirical models lack the biological basis necessary to evaluate mitigation strategies to reduce excretion of waste, including nitrogen, phosphorus and methane. Such models may have little predictive value when comparing various feeding strategies. Examples include the Intergovernmental Panel on Climate Change (IPCC) Tier II models to quantify methane emissions and current protein evaluation systems to evaluate low protein diets to reduce nitrogen losses to the environment. Nutrient based mechanistic models can address such issues. Since environmental issues generally attract more funding from governmental offices, further development of nutrient based models may well take place within an environmental framework.

Little information is available on the effects of different sources of tannins on ruminant product quality. Nowadays several tannin-rich extracts, produced from different plants, are available and contain tannins belonging to different chemical groups, but most of these have not been used so far as feed supplements. The present study aimed at comparing the effects of feeding three tannin extracts (one containing condensed tannins and two containing hydrolysable tannins) to lambs on growth performances and meat oxidative stability. Comisana male lambs were divided into four groups (n=9 each) and were fed for 75 days: a concentrate-based diet (CON), or CON supplemented with 4% tannin extracts from either mimosa (MI; Acacia mearnsii, De Wild; condensed tannins), chestnut (CH; Castanea sativa, Mill; hydrolysable ellagitannins) or tara (TA; Cesalpinia spinosa, (Molina) Kuntze; hydrolysable gallotannins). Only CH reduced growth rate, final weight, carcass weight and feed intake (P<0.05). Tannins did not affect the concentration of the main fatty acid classes and the peroxidability of the intramuscular fat (P>0.05). The TA diet increased (P<0.001) the concentration of γ-tocopherol in muscle and tended to increase that of α-tocopherol (P=0.058). Oxidative stability of raw and cooked meat, or of meat homogenates incubated with pro-oxidants, was not affected by the extracts. These results, compared with those reported in the literature, highlight that some effects of tannins cannot be easily generalized, but may strictly depend on their specific characteristics and on conditions inherent to the basal diet and the metabolic status of the animals.

Supplementation of carnitine has been shown to improve performance characteristics such as protein accretion in growing pigs. The molecular mechanisms underlying this phenomenon are largely unknown. Based on recent results from DNA microchip analysis, we hypothesized that carnitine supplementation leads to a downregulation of genes of the ubiquitin proteasome system (UPS). The UPS is the most important system for protein breakdown in tissues, which in turn could be an explanation for increased protein accretion. To test this hypothesis, we fed sixteen male, four-week-old piglets either a control diet or the same diet supplemented with carnitine and determined the expression of several genes involved in the UPS in the liver and skeletal muscle. To further determine whether the effects of carnitine on the expression of genes of the UPS are mediated directly or indirectly, we also investigated the effect of carnitine on the expression of genes of the UPS in cultured C2C12 myotubes and HepG2 liver cells. In the liver of piglets fed the carnitine-supplemented diet, the relative mRNA levels of atrogin-1, E214k and Psma1 were lower than in those of the control piglets (P < 0.05). In skeletal muscle, the relative mRNA levels of atrogin-1, MuRF1, E214k, Psma1 and ubiquitin were lower in piglets fed the carnitine-supplemented diet than that in control piglets (P < 0.05). Incubating C2C12 myotubes and HepG2 liver cells with increasing concentrations of carnitine had no effect on basal and/or hydrocortisone-stimulated mRNA levels of genes of the UPS. In conclusion, this study shows that dietary carnitine decreases the transcript levels of several genes involved in the UPS in skeletal muscle and liver of piglets, whereas carnitine has no effect on the transcript levels of these genes in cultivated HepG2 liver cells and C2C12 myotubes. These data suggest that the inhibitory effect of carnitine on the expression of genes of the UPS is mediated indirectly, probably via modulating the release of inhibitors of the UPS such as IGF-1. The inhibitory effect of carnitine on the expression of genes of the UPS might explain, at least partially, the increased protein accretion in piglets supplemented with carnitine.

One hundred entire male pigs growing between 20 and 45 kg live weight were used to investigate the effects on growth performance and carcass composition of eight concentrations of dietary crude protein (CP), ranging from 93 to 238 g/kg and three levels of food intake (giving mean daily digestible energy 15·6, 18·7 and 22·4 MJ).

Growth rate improved with each increase in food intake and with increase in dietary CP up to 175 g/kg (10·5 g lysine per kg) at all food intakes. Food:gain ratio (g food per g growth) improved with increase in dietary CP up to 175 g/kg and with the first increase in food intake.

The rate of protein deposition in the carcass (excluding viscera) increased with each increase in level of feeding, and with increases in dietary CP up to 175 g/kg. The results showed that for pigs given diets deficient in protein, the rate of protein deposition was linearly related to protein intake and independent of energy intake. For pigs given diets adequate in protein, the rate of protein deposition was related to energy intake, and independent of protein intake.

The carcass fat of pigs killed at 45 kg live weight decreased on all feeding treatments with increase in dietary CP up to 175 g/kg, and was higher in pigs given the two higher levels of feeding than in those fed at the lowest level. The effect of feeding level on carcass fat content declined as the protein adequacy of the diet was reduced.

Surgical castration of male piglets is a common management practice conducted on commercial swine farms to prevent the occurrence of boar taint and aggressive behavior. However, the procedure of surgical castration causes acute pain-induced distress, which is an animal welfare concern. The objective of this study was to evaluate the use of two topical anesthetics to alleviate the pain caused by castration in piglets as measured by physiological and behavior indices of stress. At 3 days of age, 40 weight-matched piglets were allocated to one of four treatment groups. Treatments included: (i) sham castration (CON), (ii) surgical castration (CAS), (iii) castration and short-acting local anesthetic applied topically to the castration wound (SHORT) and (iv) castration and long-acting local anesthetic applied topically to the castration wound (LONG). Blood samples were collected from piglets before and 30, 60, 120 and 180 min after castration to measure leukocyte and differential counts and cortisol concentrations. The above experiment was repeated without blood collection and behavior was recorded for 30 min before and 180 min after castration or handling. Stress vocalizations were recorded during castration and handling. All piglets were weighed before and 24 h after castration and wound healing was recorded daily for the first 14 days after castration. Leukocyte counts and differentials did not differ (P > 0.05) among any of the treatments. Cortisol concentrations were elevated (P < 0.06) in CAS, SHORT and LONG piglets compared with controls 30 and 60 min after castration. The percentage of stress vocalizations was greater (P < 0.05) among castrated piglets compared with CON piglets, regardless of anesthetic treatment. Piglets that were castrated and not given a topical anesthetic spent more time (P < 0.05) lying without contact compared with piglets castrated and given a topical anesthetic, regardless of the topical anesthetic administered. Body weight change did not differ (P > 0.05) among treatments 24 h after castration or control handling and wound healing scores were greater (P < 0.05) in SHORT compared with CAS and LONG piglets 9 to 14 days after castration. In this study, the use of a short- or long-acting topical anesthetic was not effective in reducing the pain-induced distress caused by castration in piglets. Further research is needed to evaluate alternative practical methods to reduce the pain caused by the on-farm castration of piglets.

Lactose percentage (LP) in milk is currently determined in most herd-testing schemes, and globally, it is usually routinely recorded in the framework of the official milk recording procedures. However, few studies have investigated the phenotypic and genetic variability of this component. Data used in the present paper consisted of 59 811 test-day records from 4355 Holstein cows in 266 herds. Heritabilities of LP and lactose yield (LY) were estimated through single-trait repeatability animal models, whereas genetic and phenotypic correlations of LP and LY with milk composition and production traits, somatic cell score and milk freezing point were estimated using bivariate models. Fixed effects included in the analyses were herd-test-date, season of calving, parity, stage of lactation and the interaction between parity and stage of lactation. Random effects were animal additive genetic, within and across lactation permanent environment and the residual. Lactation curves of LP and LY increased from parturition to the peak of lactation and decreased thereafter, mirroring the typical curve of milk yield. Lactose percentage was greater in first- than later-parity cows. Heritabilities of LP and LY were 0.43±0.03 and 0.14±0.02, respectively, and LP and protein percentage were the most repeatable traits. Genetic correlations (ra) of LP with somatic cell score, LY and milk freezing point were −0.22±0.08, 0.28±0.08 and −0.46±0.05, respectively. Genetic relationships of LY with milk yield (ra=0.97±0.00), fat percentage (ra=−0.71±0.06), protein percentage (ra=−0.57±0.06) and protein yield (ra=0.64±0.06) were moderate to strong. Results suggest that milk LP could be considered in breeding strategies to accelerate the gain of correlated low heritable traits. Further research is needed to evaluate the feasibility of including LP in the selection index of Italian Holstein population to address country-specific needs and market demands.

A study was made in two parts to establish the production performance potential of pigs taken to heavy slaughter weights (a) in individual housing and (b) in group housing. In experiment 1 96 crossbred pigs, comprised of equal numbers of boars, castrated males and gilts, were housed individually from 50 kg live weight and offered food ad libitum until one of four target slaughter weights was reached (70, 80, 90 or 100 kg carcass weight). Detailed dissection and meat quality assessments were performed on sample joints taken from these pigs. There were significant interactions in that boars maintained a high level offood conversion efficiency while this deteriorated at heavier weights for castrated males and gilts. Protein deposition rates (PDR) were estimated to be close to, or in excess of, 200 glday for boars. Daily live-weight gains were similar at all four slaughter weights despite increases (P < 0·001) in daily food intake at the heavier weights. Sample joint contents of lean (P < 0·05) and bone (P = 0·001) decreased while subcutaneous fat content increased (P < 0·001) with increasing slaughter weight. Cooking loss was reduced (P < 0·001) at the heavier weights while other meat quality parameters were not significantly affected by slaughter weight or gender. In experiment 2 288 group-housed boars and gilts were slaughtered at the same four target carcass weights as in experiment 1. Daily food intake, daily live-weight gain and variability in performance were lower for group-housed animals. It is concluded that maximum lean growth lies beyond ad libitum food intake for group-housed pigs of the genotype used in the present study. There are opportunities to take pigs to high slaughter weights with no reduction in daily live-weight gain and concomitant improvements in some aspects of meat quality.

Despite their major contribution to the energy supply of ruminants, the production of volatile fatty acids (VFA) in the rumen is still poorly predicted by rumen models. We have developed an empirical approach, based on the interpretation of large bibliographic databases gathering published in vivo measurements of ruminal VFA production rate (PR), rates of duodenal and faecal digestion and molar percentages of VFA in the rumen. These databases, covering a wide range of intake levels and dietary composition, were studied by meta-analysis using within-experiment models. We established models to quantify response laws of total VFA-PR and individual VFA molar percentages in the rumen to variations in intake level and dietary composition. The rumen fermentable organic matter (RfOM) intake, estimated from detailed knowledge of the chemical composition of diets according to INRA Feed Tables, appears as an accurate explanatory variable of measured total VFA-PR, with an average increment of 8.03 ± 0.64 mol total VFA/kg RfOM intake. Similar results were obtained when total VFA-PR was estimated from measured apparent RfOM (total VFA-PR/RfOM averaging 8.3 ± 1.2 mol/kg). The VFA molar percentages were related to dry matter intake and measured digestible organic matter (OM), digestible NDF and rumen starch digestibility, with root mean square error of 1.23, 1.45, 0.88 and 0.41 mol/100 mol total VFA for acetate, propionate, butyrate and minor VFA, respectively, with no effect of pH on the residuals. Stoichiometry coefficients were calculated from the slopes of the relationships between individual VFA production (estimated from measured apparent RfOM and individual VFA molar percentages) and measured fermented fractions. Coefficients averaged, respectively, 66, 17, 14 and 3 mol/100 mol for NDF; 41, 44, 12 and 4 mol/100 mol for starch; and 46, 35, 13 and 6 mol/100 mol for crude protein. Their use to predict VFA molar percentages appear relevant for most dietary conditions, that is, when the digested NDF/digested OM ratio exceeded 0.12. This study provides a quantitative review on VFA yield in the rumen. It contributes to the development of feed evaluation systems based on nutrient fluxes.

A randomised design involving 66 continental cross beef steers (initial live weight 523 kg) was undertaken to evaluate the effects of the inclusion of maize or whole-crop wheat silages in grass silage-based diets on animal performance, carcass composition, and meat quality of beef cattle. Grass silage was offered either as the sole forage or in addition to either maize or whole-crop wheat silages at a ratio of 40:60, on a dry matter (DM) basis, alternative forage: grass silage. For the grass, maize, and whole-crop wheat silages, DM concentrations were 192, 276, and 319 g/kg, ammonia-nitrogen concentrations were 110, 90, and 150 g/kg nitrogen, starch concentrations were not determined, 225, and 209 g/kg DM and in vivo DM digestibilities were 0.69, 0.69, and 0.58; respectively. The forages were offered ad libitum following mixing in a paddle type complete diet mixer wagon once per day, supplemented with either 3 or 5 kg concentrates per steer per day, in two equal feeds, for 92 days. For the grass, grass plus maize and grass plus whole-crop wheat silage-based diets food intakes were 8.38, 9.08, and 9.14 kg DM per day, estimated carcass gains were 514, 602, and 496 g/day and carcass weights were 326, 334, and 325 kg; respectively. Altering the silage component of the diet did not influence carcass composition or meat eating quality. Increasing concentrate feed level tended ( P = 0.09) to increase estimated carcass fat concentration and increased sarcomere length ( P < 0.05), and lean a* ( P < 0.01), b* ( P < 0.05), and chroma ( P < 0.01). There were no significant silage type by concentrate feed level interactions for food intake, steer performance, carcass characteristics or meat eating quality. It is concluded that replacing grass silage with maize silage increased carcass gain, and weight due to higher intakes, and improved utilisation of metabolisable energy. Whilst replacing grass silage with whole-crop wheat silage increased live-weight gain, the reduced dressing proportion resulted in no beneficial effect on carcass gain, probably due to increased food intakes of lower digestible forage increasing gut fill. Meat quality or carcass composition were not altered by the inclusion of maize or whole-crop silages in grass silage based diets.
