Changes in body composition of 54, second to fourth parity, autumn-calving Holstein-Friesian dairy cows offered grass silage ad libitum and 3(L), 6(M) or 9(H) kg concentrate dry matter per day were measured by serial slaughter at 0, 2, 5, 8, 11, 14, 19, 24 and 29 weeks post partum.

Concentrate level had a significant effect on the fresh weights of many of the body fractions with the differences generally being greater between L and M than between M and H. Increasing concentrate level generally reduced the extent of weight loss of body fractions in early lactation and enhanced subsequent repletion. Empty body weight decreased to week 8 and then increased steadily over the remaining 21 weeks, but within this pattern different organs were concomitantly increasing and decreasing. Carcass weight and the weights of the internal fat depots showed a decline over the first 8 weeks and a subsequent increase, udder weight declined throughout, weights of various sections of the digestive tract showed an initial increase then remained steady, whilst liver weight increased throughout.

In week 0 the carcass accounted for proportionately 0-61 of the total energy in the body (6278 MJ), of which fat and crude protein (CP) comprised proportionately 0·67 and 0·33, respectively. In early lactation mobilization of fat and CP in the carcass was reduced with increasing level of concentrate. In the non-carcass fraction increasing concentrate level led to a higher weight of CP in the metabolically active organs such as the digestive tract and udder but had little effect on the weight of fat. Nevertheless, there was generally a positive effect of concentrate level on energy content. Total weights of fat, CP and water in the body declined to week 8 then increased over the following 21 weeks. Although weight of CP in the liver increased throughout lactation and weight of fat was elevated in weeks 0 and 2, the energy content of the liver remained fairly constant.

Estimates of the change in net energy (NE) associated with live-weight loss and with live-weight gain showed a slight though non-significant difference between the two, despite evidence of a higher concentration of fat associated with gain than with loss, and CP concentration being the same in both cases. The mean value was 19·3 MJ/kg live-weight change.

The objective of this study was to test whether the use of tannin-rich shrub legume forage is advantageous for methane mitigation and metabolic protein supply at unchanged energy supply when supplemented in combination with tannin-free legumes to sheep. In a 6 × 6 Latin-square design, foliage of two tannin-rich shrub legume species (Calliandra calothyrsus and Flemingia macrophylla) were used to replace either 1/3 or 2/3, respectively, of a herbaceous high-quality legume (Vigna unguiculata) in a diet composed of the tropical grass Brachiaria brizantha and Vigna in a ratio of 0.55 : 0.45. A Brachiaria-only diet served as the negative control. Each experimental period lasted for 28 days, with week 3 serving for balance measurement and data collection inclusive of a 2-day stay of the sheep in open-circuit respiration chambers for measurement of gaseous exchange. While Vigna supplementation improved protein and energy utilisation, the response to the partial replacement with tannin-rich legumes was less clear. The apparent total tract digestibilities of organic matter, NDF and ADF were reduced when the tannin-rich plants partially replaced Vigna, and the dose–response relationships were mainly linear. The tannin-rich plants caused the expected redistribution of more faecal N in relation to urinary N. While Flemingia addition still led to a net body N retention, even when fed at the higher proportion, adding higher amounts of Calliandra resulted in body protein mobilisation in the growing lambs. With respect to energy, supplementation of Vigna alone improved utilisation, while this effect was absent when a tannin-rich plant was added. The inclusion of the tannin-rich plants reduced methane emission per day and per unit of feed and energy intake by up to 24% relative to the Vigna-only-supplemented diet, but this seems to have been mostly the result of a reduced organic matter and fibre digestion. In conclusion, Calliandra seems less apt as protein supplement for ruminants while Flemingia could partially replace a high-quality legume in tropical livestock systems. However, methane mitigation would be small due to associated reductions in N and energy retention.

1. Some criticisms of the classical approach to constructing a selection index are advanced. This approach (the economic model) is contrasted with an alternative one (the biological model) which is derived from the concept of the biological efficiency of production of lean tissues. The selection objective which is proposed from the biological model is the improvement of lean tissue feed conversion. The most important single means of achieving this is increasing the lean tissue growth rate.

2. The approaches were compared in three studies: (a) the effects of errors in economic and genetic parameters of the economic index; (b) phenotypic relationships between biological objectives and other measures of performance; (c) a theoretical model based on the utilization of metabolizable energy.

3. In a fixed situation the results were similar for both models, but the main advantage of the biological model is that it gives good indications of what happens, and what selection policies should be, in different situations. In addition, lean tissue feed conversion and lean tissue growth rate are closely related to concepts widely applied in biology, and their use as selection objectives should be helpful in enabling workers in many disciplines to make use of each other's knowledge.

The construction of a suitable farrowing environment is a continuing dilemma: the piglet’s needs must be matched with those of the sow and the farmer during the main phases that constitute farrowing: nest building, parturition and lactation. Difficulties exist in resolving the various conflicts of interest between and within these three parties (e.g. sow v. farmer: space needed for nest building v. space needed to maximise the amount of farrowing accommodation, or sow v. sow: ensuring the survival of the current litter v. maintaining condition for future litters). Thus, the challenge is to resolve these conflicts and design a system that maximises sow and piglet welfare while maintaining an economically efficient and sustainable enterprise. In order to successfully design a farrowing and lactation environment, it is necessary to consider the biological needs of both the sow and her litter. The natural behaviour of the sow has been well documented and very little variation exists between reports of peri-parturient behaviour observed in extensively kept domestic sows and their wild counterparts. The failure for domestication to significantly alter these behavioural patterns provides evidence that they are biologically significant and that the commercial farrowing environment should attempt to accommodate this behavioural repertoire. In addition, the behavioural needs of the piglets, as well as the physiological needs of both sows and their offspring should be considered. This article aims to review the considerable body of literature detailing the behavioural repertoire of sows and their offspring during the different phases of farrowing, and the accompanying physiological processes. The focus is on identifying biological needs of the animals involved in order to synthesise the appropriate design criteria for farrowing and lactation systems, which should optimise both welfare and animal production.

The effects of three fat supplements on milk yield and composition were measured using 12 mid-lactation in-calf Hoistein-Friesian cows in a balanced incomplete change-over design over three periods each of 3 weeks. All cows received a basal diet consisting of 36 kg/day grass silage (dry matter (DM) 270 g/kg, metabolizable energy (ME) 11·6 MJ/kg DM) and 7 kg/day o f a concentrate mixture containing (g/kg) rolled barley (501), molassed sugar-beet pulp shreds (277), soya-bean meal (208) and a standard cow mineral supplement (14). Treatments were CON (control-no supplement); LIN and FISH (250 gl day of either linseed oil or marine oil, providing approximately 0·046 of ME intake) or TOA (95 glday of tuna orbital oil, providing 0·018 of total ME intake).

There were no significant effects on silage DM intake or milk yield (means 9·25 and 17·2 kg/day respectively). The FISH and TOA treatments depressed (F < 0·05) milk fat concentration (45·4, 44·6, 34·5 and 41·6 (s.e.d. 1·08) g/kg for CON, LIN, FISH and TOA respectively; note — the same treatment order is used for all results quoted). Compared with values for CON, yield of f at (glday) was significantly (F < 0·05) greater for LIN and significantly lower for FISH (739, 808, 572 and 732, s.e.d. 28·7). All three oil supplements reduced (F < 0·05) milk protein content (33·6, 32·5, 30·6 and 32·4 (s.e.d. 0·43) g/kg) but, apart from a small increase for LIN, protein yield (glday) was unaffected (545, 586, 510 and 574, s.e.d. 20·2).

The concentrations (g/100 g) of short-chain fatty acids (< C14) and C16 : 0 in milk f at were lower (F < 0·05) for LIN than for the other treatments. All supplements increased the concentrations ofC18:1 (F < 0·05), the value for LIN being greater (F < 0·05) than for the other treatments (21·0, 27·2, 25·3 and 23·7, s.e.d. 0·74). The FISH and TOA treatments increased (F < 0·05) the concentrations of long chain (< C2O) (n-3) poly-unsaturated fatty acids (PUFA), (0·19, 0·17, 0·49 and 0·27, s.e.d. 0·026) but less than proportionately 0·03 of dietary intake of these acids was transferred to milk, probably because they were found to be mostly in the phospholipid and cholesterol ester fractions of plasma. The FISH and TOA treatments increased (F < 0·05) the percentages of total trans fatty acids in milk fat (1·13, 2·19, 10·26 and 3·62, s.e.d. 0·728) whilst a significant (F < 0·05) increase in conjugated linoleic acid (CLA) was observed only for FISH (0·16, 0·28, 1·55, and 0·52, s.e.d. 0·154). Concentrations of CLA and total trans acids in milk were highly correlated (r = 0·91, no. =36, F < 0·001) whilst trans acids in milk were inversely correlated with milk fat content (r = -0·63, no. = 36, F < 0·001) supporting the theory that milk fat depression may be caused by increased supply of trans fatty acids to the mammary gland. The health implications of these changes in milk fat composition are discussed.

Recent publications indicate that the prevalence of perinatal mortality has increased in some dairy industries and an increased proportion of this loss is not associated with the traditional risk factors for perinatal mortality. The objectives of this study were to establish the prevalence of perinatal mortality (calf death within 24 h of calving) in Irish dairy herds and to determine the current significance of putative risk factors in pasture-based management systems. A total of 182 026 records of full-term calvings from Holstein-Friesian dams served by artificial insemination (AI) sires of seven breeds in herds of 20 calvings or more per year were available from the Irish national breeding database over 4 years (2002 to 2005). The prevalence of perinatal mortality was 4.29% (7.7% in primiparae and 3.5% in pluriparae). The likelihood of perinatal mortality increased between 2002 and 2005 and was greatest in June and in winter. There was an interaction (P < 0.001) between the effect of calving assistance and parity with the effect of dystocia on perinatal mortality being greater in primiparae. The odds of perinatal mortality were greater in male (OR = 1.12; P < 0.001) and in twin calves (OR = 5.70-13.36; P < 0.001) and in dams that had perinatal mortality at the previous calving (OR = 4.21; P < 0.001). The logit of the probability of perinatal mortality increased by 0.099 per unit increase in sire predicted transmitting ability (PTA) for direct perinatal mortality. The probability of perinatal mortality increased at an increasing rate in primiparae as animals calved at a younger age relative to the median age at first calving. The only herd-level factor examined, herd size did not affect the odds of perinatal mortality. These data indicate that the prevalence of perinatal mortality in this cattle population is similar to that in other pasture-based dairy systems worldwide. The putative exposures and attributes traditionally associated with perinatal mortality were associated with perinatal mortality in this pasture-based dairy cow population. The practical implication of these results is that as many of the significant risk factors are largely not under management control (year of calving, month of calving, twin calving, primiparity, previous perinatal mortality and foetal gender), herd owners must focus on the significant determinants under their control (age at first calving, sire genetic merit for direct perinatal mortality and both the extent of calving supervision and the degree of assistance), in order to reduce the prevalence of perinatal mortality and improve perinatal welfare.

It may be possible for dairy farms to improve profitability and reduce environmental impacts by selecting for higher feed efficiency and lower methane (CH4) emission traits. It remains to be clarified how CH4 emission and feed efficiency traits are related to each other, which will require direct and accurate measurements of both of these traits in large numbers of animals under the conditions in which they are expected to perform. The ranking of animals for feed efficiency and CH4 emission traits can differ depending upon the type and duration of measurement used, the trait definitions and calculations used, the period in lactation examined and the production system, as well as interactions among these factors. Because the correlation values obtained between feed efficiency and CH4 emission data are likely to be biased when either or both are expressed as ratios, therefore researchers would be well advised to maintain weighted components of the ratios in the selection index. Nutrition studies indicate that selecting low emitting animals may result in reduced efficiency of cell wall digestion, that is NDF, a key ruminant characteristic in human food production. Moreover, many interacting biological factors that are not measured directly, including digestion rate, passage rate, the rumen microbiome and rumen fermentation, may influence feed efficiency and CH4 emission. Elucidating these mechanisms may improve dairy farmers ability to select for feed efficiency and reduced CH4 emission.

A first group of three horses was given diet 1 (D1) allowing 1180 g per 100 kg body weight (BW) of a pelleted food rich in fibre (P1) and 556 g per 100 kg BW of straw during a 20-day period to allow for adaptation. A second group of four horses were given diet 2 (D2) allowing 1180 g per 100 kg BW of a pelleted food rich in cereals (P2) and 1000 g per 100 kg BW of meadow hay during the same period. Digesta was collected from the stomach, duodenum, jejunum, ileum, caecum, right ventral colon, left ventral colon, left dorsal colon, right dorsal colon, and small colon, and faeces were collected under general anaesthesia 2·5 h after the ingestion of the morning pelleted meal. The concentration of total anaerobic, cellulolytic and lactic acid-utilizing bacteria, lactobacilli and streptococci were determined in all these segments except for the duodenum, left ventral colon, right dorsal colon and small colon. D-/L-lactic acid, volatile fatty acids and pH were measured in all anatomic segments of the digestive tract (from stomach to small colon). The caecal concentration of total anaerobic bacteria was the lowest (7·9 5 107 colony-forming units (c f. u.) per ml), whereas that of the stomach was the highest (1·4 5 109 c f. u. per ml) (P < 0·001). Cellulolytic bacteria did not exceed 3·0 5 102 c f u. per ml in the ante-caecal segments whereas in the hindgut the average concentration was 5·3 x 105 c f u. per ml (P < 0·001). Likewise, VFA concentrations were also greater in the large intestine (on average, 96·3 mmol/l v. 8·8 mmol/l in the ante-caecal segments) (P < 0·001), confirming the limited extent of fibre degradation in these ante-caecal segments. Lactobacilli, streptococci and lactate-utilizing bacteria colonized all the digestive tract; the stomach and the small intestine tended to host the greatest numbers of these bacteria, which suggests a high interference of micro-organisms with the digestion of readily fermentable carbohydrates. Compared with the other ante-caecal segments, the stomach ecosystem seemed the most affected by the composition of the last pelleted meal ingested: the concentrations of lactobacilli and lactate-utilizing bacteria were higher (P < 0·05) with P2. The lower concentration of D-/L-lactate with P2 (P < 0·05) was concomitant with a greater proportion of propionate (P < 0·05), probably related to a greater fermentation of lactate. In the large intestine of horses given D2, cellulolytic bacteria tended to be lower, whereas VFA concentrations were higher (P < 0·05). The lower [NDF/starch] ratio of D2 was probably less propitious for the proliferation of cellulolytic bacteria but was compensated by the higher cellulose intake brought by the hay.

Genetic selection and better control of the environment of the pigs have resulted in increased production levels concerning both reproduction and growth. Such high performances imply high physiological demands that may deteriorate health and welfare. The aims of this paper are to review the physiological challenges that pigs are facing, to identify possible consequences on health and welfare, to propose ways of detecting and correcting problems whenever possible. At weaning, piglets are submitted to abrupt changes in food supply, housing and social environment. Behavioural changes and efficient adaptations of the digestive tract are critical for their health and welfare. Physiological demands to support these adaptations and risks of failure are inversely related to the age of the pigs. During fattening, modern pigs have high daily weight gain especially of lean tissue as well as elevated feed conversion rate. These high growth performances are suspected to favour stress and disease susceptibility, undesirable behaviours as well as leg weakness, but further experimental data are necessary to validate these effects and find their origin. In reproductive females, high prolificacy generates elevated foetal demands for nutrients and space that are not fully met as shown by an increased number of light piglets having difficulties to adapt successfully to the neonatal life. During lactation, sows with high milk production have high nutrient requirements leading to intense catabolism that may affect their health, welfare and future reproductive abilities.

Dairy fat contains high amounts of saturated fatty acids (FA), which are associated with cardiovascular disease (CVD) risk. Manipulation of dairy cows nutrition allows to decrease the saturated FA content of milk fat, and is associated with increases either in conjugated linoleic acid (CLA) and trans-11-C18:1 contents, or in trans-10-C18:1 content. CLA putatively exhibits beneficial properties on CVD risk, whereas trans FA are suspected to be detrimental. The present study compared the effects of a trans-10-C18:1-rich butter (T10 butter), a trans-11-C18:1+CLA-rich butter (T11-CLA butter) and a standard butter (S butter) on lipid parameters linked to the CVD risk and fatty streaks. Thirty-six White New Zealand rabbits were fed one of the three butters (12% of the diet, plus 0.2% cholesterol) for 6 (experiment 1) or 12 (experiment 2) weeks. Liver lipids, plasma lipids and lipoprotein concentrations (experiments 1 and 2) and aortic lipid deposition (experiment 2) were determined. The T10 butter increased VLDL-cholesterol compared with the two others, and total and LDL-cholesterol compared with the T11-CLA butter ( P < 0.05). The T10 butter also increased non-HDL/HDL ratio and aortic lipid deposition compared with the T11-CLA butter ( P < 0.05). The T11-CLA butter non-significantly reduced aortic lipid deposition compared with the S butter, and decreased HDL-cholesterol and increased liver triacyglycerols compared with the two other butters ( P < 0.05). These results suggest that, compared with the S butter, the T10 butter had detrimental effects on plasma lipid and lipoprotein metabolism in rabbits, whereas the T11-CLA butter was neutral or tended to reduce the aortic lipid deposition.

Random regression models have been advocated for the analysis of test day records in dairy cattle. The effectiveness of a random regression analysis depends on the function used to model the data. To investigate functions suitable for the analysis of daily milk yield, test day milk yields of 7860 first lactation Holstein Friesian cows were analysed using random regression models involving three types of curves. Each analysis fitted the same curve to model overall trends through a fixed regression and random deviations due to animals. Curves included orthogonal polynomials, fitted to order 3 (quadratic), 4 (cubic) and 5 (quartic), respectively, a three-parameter parametric curve and a five-parameter parametric curve. Sets of random regression coefficients were fitted to model both animals’ genetic effects and permanent environmental effects. Temporary measurement errors were assumed independently but heterogeneously distributed, and assigned to one of 12 classes. Results showed that the measurement error variances were generally lowest around peak lactation, and higher at the beginning and end of lactation. Parametric curves yielded the highest likelihoods, but produced negative genetic associations between yield in early lactation and later lactation yields, while positive genetic correlations across the entire lactation were estimated with all models involving orthogonal polynomials. The fit of models using orthogonal polynomials to model test day yield was improved by including higher order fixed regressions.

To test the proposition that growing pigs, when given a choice between two foods, are able to select a diet that meets their requirements, and to investigate the rules of diet selection, four foods (L, A, B and H) with similar energy yields, but different concentrations of crude protein (CP) (125, 174, 213 and 267 g CP per kg fresh food respectively) were formulated. The four foods were offered ad libitum either singly, or as a two-way choice using all the six possible pairs, to 40 individually caged pigs from 12 to 30 kg live weight. On the single foods the rate of food intake fell from 1001 to 971 to 961 to 868 (s.e.d. 40) g/day (F < 0·05) as the protein concentration of the foods increased from L to H; the growth rate followed an opposite trend (492, 627, 743 and 693 (s.e.d. 31) g/day respectively; P < 0·01). When the pigs had to select between two foods limiting in protein (L and A) the less limiting one was preferred (710 (s.e. 200) g A per kg total food intake; the protein concentration of the selected diet was 160 (s.e. 10) g CP per kg). On the choice between B and H (a choice between a food with protein concentration close to requirements and a food with protein excess) the lower food was markedly preferred (928 (s.e. 4) g B per kg total food intake; the protein concentration of the selected diet was 218 (s.e. 1) g CP per kg). When the animals were given a choice between two foods, a combination of which was non-limiting (pairs LB, LH, AB and AH), the protein concentrations of the selected diets were not different between treatments (208, 204, 202 and 205 (s.e.d. 13) g CP per kg respectively) and they also declined systematically with time and weight. The growth rate of the animals on these pairs were 752, 768, 769 and 763 (s.e.d. 54) g/day (P > 0·05), which were not significantly different from the highest growth rate achieved on a single food. The results suggest that pigs, when given a choice between a suitable pair of foods, are able to choose a balanced diet and to change its composition to reflect their changing requirements. The choice-feeding method may well be useful as an effective and economic way of estimating and meeting requirements, and of measuring the growth potential of pigs.

Selection for increased litter size have generated hyper-prolific sows that nurses large litters, however limited knowledge is available regarding the connection between milk production, feed intake and body mobilization of these modern sows. The aim of the current study was to determine what characterized sows with high milk production and nursing large litters, differences between sows of different parities and effects of lactational performance on next reproductive cycle. In total 565 sows (parity 1 to 4) were studied from 7 days before farrowing until weaning. On day 2 postpartum litters were standardized to 14 piglets. Weight and back fat thickness of sows were measured at day 7 prepartum, day 2 postpartum and at weaning. Litters were weighed at day 2 and at weaning. Pearson correlation coefficients between variables were calculated and regression models were developed. The average daily feed intake (ADFI) of the sows was 6.1±1.1 kg/day, average daily gain (ADG) of the litter was 2.92±0.53 kg/day and sows weaned 13.0±1.1 piglets. First parity sows generally had a lower ADFI and milk production and a decrease in total born piglets in next litter compared with parity 2 to 4 sows, which could be explained by a relatively higher proportion of their body reserves being mobilized compared with multiparous sows. The ADG of the litter was positively related by ADFI of the sows, litter size and BW loss and increasing the ADFI with 1 kg/day throughout lactation likely increased the ADG of the litter with 220 to 440 g/day in parity 1 to 4, respectively. Increasing the ADFI by 1 kg/day reduced the BW loss with 6.6 to 13.9 kg of parity 1 to 4 sows, respectively, during lactation, whereas increasing the average milk yield with 1 kg/day raised the BW loss with 4.3 to 21.0 kg of the four parities during lactation. The number of total born piglets in the next litter was positively related to the number of piglets born in the previous litter. In conclusion, both a high feed intake and a high mobilization of body reserves was a prerequisite for a high milk production. The sows might be very close to the physical limit of what they can ingest and future research should therefore, focus on optimizing the dietary energy and nutrient concentrations of diets for lactating hyper-prolific sows and herein distinguish between primiparous and multiparous sows.

A better understanding of how livestock respond to weather is essential to enable farming to adapt to a changing climate. Climate change is mainly expected to impact dairy cattle through heat stress and an increase in the frequency of extreme weather events. We investigated the effects of weather on milk yield and composition (fat and protein content) in an experimental dairy herd in Scotland over 21 years. Holstein Friesian cows were either housed indoors in winter and grazed over the summer or were continuously housed. Milk yield was measured daily, resulting in 762 786 test day records from 1369 individuals, and fat and protein percentage were sampled once a week, giving 89 331 records from 1220 cows/trait. The relative influence of 11 weather elements, measured from local outdoor weather stations, and two indices of temperature and humidity (THI), indicators of heat stress, were compared using separate maximum likelihood models for each element or index. Models containing a direct measure of temperature (dry bulb, wet bulb, grass or soil temperature) or a THI provided the best fits to milk yield and fat data; wind speed and the number of hours of sunshine were most important in explaining protein content. Weather elements summarised across a week’s timescale from the test day usually explained milk yield and fat content better than shorter-scale (3 day, test day, test day −1) metrics. Then, examining a subset of key weather variables using restricted maximum likelihood, we found that THI, wind speed and the number of hours of sunshine influenced milk yield and composition. The shape and magnitude of these effects depended on whether animals were inside or outside on the test day. The milk yield of cows outdoors was lower at the extremes of THI than at average values, and the highest yields were obtained when THI, recorded at 0900 h, was 55 units. Cows indoors decreased milk yield as THI increased. Fat content was lower at higher THIs than at intermediate THIs in both environments. Protein content decreased as THI increased in animals kept indoors and outdoors, and the rate of decrease was greater when animals were outside than when they were inside. Moderate wind speeds appeared to alleviate heat stress. These results show that milk yield and composition are impacted at the upper extreme of THI under conditions currently experienced in Scotland, where animals have so far experienced little pressure to adapt to heat stress.

There is growing evidence on the extent to which projected changes in climate, including increases in atmospheric levels of carbon dioxide, higher temperatures, changes in amount, seasonality and variability of precipitation and increases in extreme weather events, may affect future availability of ruminant animal products. Elements of climate change affect livestock systems through direct impacts on animal physiology, behaviour, production and welfare and indirectly through feed availability, composition and quality. These impacts may be positive or negative and will vary across geographical regions, animal species and with adaptive capacity. However, adverse impacts are likely to be greatest in tropical and sub-tropical regions including countries where both current need and future growth in demand for nutrition is greatest. The complexity of effects means that effective adaptation strategies to mitigate negative impacts on ruminant production systems to climate changes will need to be multi-dimensional. Although predictions of future climate, particularly on regional and local scales, have a degree of uncertainty, adaptation planning is starting to be informed by changes already being observed and adjustments in management being made by farmers to maintain productivity and profitability. Regional case studies illustrate the benefits and limitations of adaptive management: potential mitigation through heightened awareness of heat stress-related mortality in French cattle; evidence of a drop in milk production in south-eastern Australian dairies during a January 2014 heat wave, from the theoretical potential of 53% to only 10% across the state; and limitations in response options to climate-induced thermal, nutritional and water stress for sheep and goat farmers in northern Ethiopia. Review of research on climate change impacts on ruminant livestock and effective adaptation together with evidence of practical adaptive management provide insights into potential strategies and gaps in knowledge to address challenges and improve future decisions.

Estimates were made of total body protein in 45 unimproved crossbred pigs slaughtered serially between 20 and 200 kg live weight. Allometric functions were used to estimate protein weight at any given body weight and the Gompertz function was used to express live-weight changes in relation to time and to predict weight at maturity. Predicted values for daily protein retention increased rapidly from 20 kg to attain, at around 75 kg live weight, maxima of 130 g for entire males, 120 g for females and 105 g for castrated males. Between 45 and 110 kg live weight rates of protein retention were maintained within 10 g of the maximum rate. Mature live weights were estimated to be 240, 215 and 225 kg for entire males, females and castrated males. The allometric exponents for whole body protein as a function of body weight were 0·963 (s.e. 0·025), 0·927 (s.e. 0·021) and 0·850 (s.e. 0·049) for entire males, females and castrated males respectively.

Two experiments were conducted with 32 Charolais cross steers (experiment 1) and 36 Holstein-Friesian and Welsh Black steers (experiment 2) to examine the effects of dietary n-3 polyunsaturated fatty acids (PUFA ) and breed on meat quality. Diets were comprised of grass silage and a concentrate (60 : 40 on a dry-matter basis). Lipid in the concentrate provided 30 g/kg diet dry matter derived from either linseed, fish oil or linseed/fish oil (experiment 1); and linseed or linseed/fish oil (experiment 2). These n-3 PUFA sources were compared with Megalac, a saturated fatty acid control, in both experiments. Diets were offered for 120 days (experiment 1) and 90 days (experiment 2). Measurements of meat quality included fatty acid composition, lipid oxidation and colour during retail display (i.e. shelf life parameters) and eating quality assessed by a trained taste panel. The samples examined were sirloin (longissimus) steaks and minced beef burgers produced from the forequarter muscles infraspinatus, supraspinatus and triceps brachii. The fatty acid results showed that linseed increased the proportion of 18 : 3 n-3 (a -linolenic acid) in neutral lipid of the burgers and approximately doubled it in the phospholipid. Increased synthesis of 20 : 4 n-3 and 20 : 5 n-3 also occurred, raising their levels in the phospholipid. Fish oil doubled the proportions of 20 : 5 n-3 and 22 : 6 n-3, with the linseed/fish oil results intermediate between linseed and fish oil. The Welsh Blacks in experiment 2 had higher proportions of 18 : 3 n-3 in neutral lipid and higher proportions of 18 : 3 n-3, 20 : 5 n-3 and 22 : 5 n-3 in phospholipid. This showed a clear genetic effect on fatty acid composition. The fish oil diet in experiment 1 greatly increased lipid oxidation during retail display in both overwrapped loin steaks and burgers packed in a modified atmosphere. Values for lipid oxidation in the burgers were much higher than in the steaks due to the intimate mixing of phospholipid fatty acids and prooxidants. Lipid oxidation was also greater in the linseed/fish oil samples than controls in both experiments but was similar in linseed and controls. Colour oxidation also proceeded more rapidly in the fish oil samples in experiment 1 and tended to be faster in the linseed/fish oil groups in both experiments. Eating quality was affected by diet in experiment 1 — the fish oil samples eliciting higher scores for ‘fishy’ and ‘rancid’ than controls and having lower ‘overall liking’ scores. Steaks from animals given the linseed diet (with high 18 : 3 n-3 proportions) had the highest ‘overall liking’ scores in experiment 1 but the cattle given linseed for the shorter time in experiment 2 were not different from controls. Despite their different PUFA profile in muscle, Welsh Blacks had similar eating quality scores to Holstein-Friesians which deposited more neutral lipid (marbling fat) in muscle.

The increasing global need to find alternative protein/energy sources has triggered research in the field of non-conventional feed ingredients, with insects and former foodstuffs being the most promising. Insects contain high level of protein and fat, whereas former foodstuffs contain high energy in the form of carbohydrates and fats; therefore, both should be considered as promising alternative feed ingredients for livestock production. In addition to the nutritional value, they also represent a way by which food waste biomasses/streams can be upgraded to valuable feed ingredients. This review outlines the main nutritional and safety issues of insects and former foodstuffs, and also considers the legal framework involved. The importance of the type of insect metamorphosis and tailored substrates that could lead to the production of a premium feed is also described. This is also the first time that a review discusses the nutritional quality of former foodstuffs. Energy and the main nutrient content of former foodstuff are compared with the composition of common cereals as the principal energy sources in animal feed. For both ingredients a critical review of the safety issues is provided. Based on the current data available, both insects and former foodstuffs have an excellent potential use as alternative feed ingredients for livestock production. When produced in line with the criteria set by major feed/food authorities, they are characterized by high quality and safety standards. This makes them comparable to other feed materials and ingredients currently available on the market, although their full nutritional, functional, safety and sustainability evaluation cannot be considered complete.

Three hundred and twenty pigs were reared from birth to slaughter at 21 weeks in either barren or enriched environments. The barren environments were defined as intensive housing (slatted floors and minimum recommended space allowances) and the enriched environments incorporated extra space including an area which contained peat and straw in a rack. Behavioural observations showed that environmental enrichment reduced time spent inactive and time spent involved in harmful social and aggressive behaviour (P < 0·001). Each pig was individually exposed to a novel object during a novel pen test at 18 weeks of age and behavioural, heart rate and plasma cortisol responses were recorded. At slaughter plasma cortisol levels were measured, adrenal glands were weighed and hearts were examined for endothelial haemorrhages. Pigs from enriched environments appeared less fearful during the novel pen test by showing a shorter latency to contact the novel object (P < 0·001) and spending more time in contact with it (P < 0·05). Plasma cortisol responses to the novel pen test tended to be higher in pigs from enriched environments (P > 0·05) and pigs from enriched environments had significantly higher cortisol levels at slaughter (P < 0·05). Adrenal weights were greater in pigs from barren environments (P < 0·05) and it is suggested that chronic activation of the pituitary-adrenal axis in barren environments led to a suppression of cortisol responses to acute stress. The higher cortisol responses to the novel pen test in pigs from enriched environments may also have resulted from greater levels of behavioural activity. This could also explain the higher maximum heart rates in pigs from enriched environments during the 1st min of the test (P < 0-05) and during the period prior to the test when they were being driven towards the test arena (P < 0-05). However, the fact that enriched pigs also showed a greater number of lesions to the endothelium of the heart (P < 0-05) may mean they had a more reactive sympathetic nervous system.

Milk yield per cow has continuously increased in many countries over the last few decades. In addition to potential economic advantages, this is often considered an important strategy to decrease greenhouse gas (GHG) emissions per kg of milk produced. However, it should be considered that milk and beef production systems are closely interlinked, as fattening of surplus calves from dairy farming and culled dairy cows play an important role in beef production in many countries. The main objective of this study was to quantify the effect of increasing milk yield per cow on GHG emissions and on other side effects. Two scenarios were modelled: constant milk production at the farm level and decreasing beef production (as co-product; Scenario 1); and both milk and beef production kept constant by compensating the decline in beef production with beef from suckler cow production (Scenario 2). Model calculations considered two types of production unit (PU): dairy cow PU and suckler cow PU. A dairy cow PU comprises not only milk output from the dairy cow, but also beef output from culled cows and the fattening system for surplus calves. The modelled dairy cow PU differed in milk yield per cow per year (6000, 8000 and 10 000 kg) and breed. Scenario 1 resulted in lower GHG emissions with increasing milk yield per cow. However, when milk and beef outputs were kept constant (Scenario 2), GHG emissions remained approximately constant with increasing milk yield from 6000 to 8000 kg/cow per year, whereas further increases in milk yield (10 000 kg milk/cow per year) resulted in slightly higher (8%) total GHG emissions. Within Scenario 2, two different allocation methods to handle co-products (surplus calves and beef from culled cows) from dairy cow production were evaluated. Results showed that using the ‘economic allocation method’, GHG emissions per kg milk decreased with increasing milk yield per cow per year, from 1.06 kg CO2 equivalents (CO2eq) to 0.89 kg CO2eq for the 6000 and 10 000 kg yielding dairy cow, respectively. However, emissions per kg of beef increased from 10.75 kg CO2eq to 16.24 kg CO2eq due to the inclusion of suckler cows. This study shows that the environmental impact (GHG emissions) of increasing milk yield per cow in dairy farming differs, depending upon the considered system boundaries, handling and value of co-products and the assumed ratio of milk to beef demand to be satisfied.
