Introduction. Persea americana (avocado) fruit is known to be a rich source of proteins and minerals, as well as vitamins. Although many biological activities have been reported for avocado fruit, far less attention has been paid to the biological properties of its lipid-soluble bioactive substances. The aim of this study was to evaluate the antioxidant and antihemolytic activity of lipid-soluble bioactive compounds of avocado fruit. Materials and methods. Antioxidant and antihemolytic activity of lipid-soluble bioactive compounds of avocado fruit was assessed by employing different methods. Also, the ability of avocado fruit to protect fluorescein against oxidant-induced bleaching was evaluated. Results and discussion. The tested sample showed good antioxidant and antihemolytic activities. There was no significant difference between the reducing power of lipid-soluble bioactive substances in avocado fruits and ascorbic acid (p < 0.05). The tested sample showed weak ferrous ion-chelating activity. The sample exhibited moderate hydrogen peroxide scavenging activity, but exhibited good antioxidant activity. Avocado fruit showed very good activity against 2,2′-azobis(2-amidinopropane) dihydrochloride- and hydrogen peroxide-induced hemolysis in erythrocytes. Furthermore, it showed good protective effects against peroxyl radical-induced bleaching in fluorescein. Conclusion. Lipid-soluble bioactive substances of avocado fruit showed good activity in all of the studied models.

Abstract – Introduction. Mango fruits grown underhigh-density planting show a progressive decline in crop yield after14–15 years, due to overcrowding of canopies, which suggests regularcanopy management is necessary. Hence, the effects of pruningtreatment on fruit yield and quality of ‘Amrapali’ mango were studiedin India over two consecutive years, 2010 and 2011. Materialsand methods. Mango trees were subjected to pruning(removal of 50 cm of shoot from the apex) in the month of September2009 with unpruned trees serving as control. Fruits were harvested atthe commercial maturity stage and quality parameters were assessedboth in fresh fruits and following ripening at room temperature [(35 ±2) °C and (80 ± 5)% RH)]. Results and discussion. Fruityield of pruned trees was found to decrease during the first yearcompared with the fruit yield of unpruned trees; later on, itincreased during the second year. Pruning resulted in significantlyhigher fruit weight, fruit firmness, total carotenoids, antioxidantcapacity and total phenolic content. Early maturity of fruits wasobserved from unpruned trees with faster color change, higher totalsoluble solids and lower titratable acidity. The fruits harvested frompruned trees showed slower ripening, and lower respiration, ethyleneevolution rate and enzyme activity as compared with fruits fromunpruned trees. Both anthracnose and stem-end rot disease percentagewere reduced in ripe fruits from pruned trees.Conclusion. Pruning treatment appears to be analternative strategy to obtain better yield and quality in denselypopulated old mango orchards.

Introduction. Soil microbiota communities have demonstrated their crucial role in maintaining the soil ecological balance and therefore the sustainability of either natural ecosystems or agroecosystems. Rhizospheric microbe-plant interactions have a great influence on plant health and soil quality since these root-associated microorganisms are able to help the host plant to deal with drought, nutritional and soil-borne pathogen stress conditions. Plant growth-promoting rhizobacteria (PGPR) can be considered among rhizosphere-beneficial microorganisms. In a micropropagated plant system, bacterial inoculation at the beginning of the acclimatisation phase must also be observed from the perspective of the establishment of the soil microbiota rhizosphere. The objective of this work was to evaluate the effect of a rhizobacteria consortium of Bacillus spp. on the first developmental stages of two micropropagated bananas. Materials and methods. Two varieties of banana plant cultivars (‘Grande Naine’ and a banana-derived tetraploid hybrid ‘ITC 1297’) were inoculated or not with a suspension of Bacillus spp. at the beginning of the weaning phase. Six plants were considered per treatment and cultured under greenhouse conditions in a randomised design. For both cultivars, plants were harvested (135 and 185) days after bacterial inoculation and analysed for growth parameters and nutrient contents. Results. Concerning plant development, bacterial application induced a positive effect on both cultivars although this effect showed some time differences depending on the banana cultivar. Foliar mineral contents were significantly increased only in ‘Grande Naine’ plants at 135 days. Our results demonstrated for the first time that the Bacillus spp. consortium tested was able to improve banana development (both cultivars) and foliar mineral contents in one of them. Conclusion. Therefore, this bacterial consortium can be described as PGPR for banana under these experimental conditions. This biotechnology, adaptable to the hardening phase, thus represents a prospective way to increase plant health and survival rates in commercial nurseries.

Introduction. Several studies reveal the important role played by ‘lesser-known’ wild fruits since they contain nutritional and functional compounds which have biological properties. Materials and methods. Our work studied the presence of bioactive compounds such as vitamin C (ascorbic acid and dehydroascorbic acid), total phenolic content, phenolic acids, flavonols, anthocyanins and the antioxidant capacity (FRAP, ABTS•+ and DPPH• in vitro tests) in wild fruits of Arbutus unedo L. and Rubus ulmifolius Schott of Spanish origin, including samples from different seasons and locations. Results and discussion. A wide variability was found in the composition of fruits of the same species, which substantiates the importance of analyzing several batches of wild fruits, to achieve representative results, taking into account the natural variability. Arbustus unedo fruits showed higher vitamin C, mainly in the ascorbic acid form, and phenolic content than R. ulmifolius [(172–419) mg ascorbic acid×100 g–1 fw vs. (5.99–26.83) mg ascorbic acid×100 g–1 fw, and (773–1621) mg total phenolic compounds×100 g–1 fw vs. (376–1326) mg total phenolic compounds×100 g–1 fw, respectively]; phenolic acids and anthocyanins are the major groups of phenolic compounds found in both species, with gallic acid and cyanidin 3-glucoside as the main compounds. Arbustus unedo fruits showed significantly higher Folin-Ciocalteu values than those of R. ulmifolius. These values are higher than those reported for the majority of berries. The significant correlations found among different antioxidant compounds (r > 0.6300, P < 0.001) may reveal a protective effect between ascorbic acid and phenolic acids or anthocyanins in the fruits. Therefore, Arbutus unedo and R. ulmifolius fruits should be considered as new important sources of safe antioxidants.

Introduction. Mango is the most economically important and nutritionally rich tropical fruit; it has high commercial value but a highly perishable nature; its sensitivity to postharvest diseases and physical injury limits its successful marketing. Postharvest losses in fruits are a serious problem because of rapid deterioration during handling, transport and storage. Edible films and coatings can be potentially used as an elective preservation technique to extend the shelf life of fruits. Materials and methods. The influence of zein and gelatin coatings on the physicochemical characteristics, softening and antioxidative enzyme activities of mango fruits stored at (32 ± 1) °C were evaluated at regular intervals of their storage period and compared with mango without coatings (control). Results and discussion. Zein and gelatin coatings seemed to have a beneficial impact on delaying the changes in weight loss, soluble solids, titratable acidity, pH, sugar content and total carotenoids. Zein and gelatin coatings resulted in the highest retention of ascorbic acid and phenolic content as compared with that of control. Zein and gelatin coatings delayed the ripening of mango fruit by suppressing the activity of softening enzymes such as polygalacturonase, pectin methyl esterase, cellulase and β-galactosidase. Zein 5% and gelatin 10% coatings maintained the highest induction of defense-related peroxidase enzymes, followed by gelatin 5% and zein 10% coatings. Conclusion. The application of zein 5% and gelatin 10% coatings could be used in delaying the ripening, maintaining the quality attributes and extending the shelf life of mango fruit during storage.

Introduction. Pomegranate fruits (Punica granatum L.) are chilling-sensitive crops. Materials and methods. Pomegranate fruits were treated with calcium chloride and spermidine, alone or in combination, by normal dip and vacuum infiltration methods. The treated fruits were stored at 2 °C for 4 months. At the end of the storage period, samples were held for 3 days at 20 °C, then the qualitative constituents were evaluated. Results and discussion. Treated fruits exhibited less weight loss and higher juice content than control fruits. Non-treated fruits developed chilling injury manifested as an increase in K+ leakage and polyphenol oxidase activity. Calcium chloride and spermidine treatments resulted in lower soluble solid content, but some fruits showed higher titratable acidity. All treatments significantly increased ascorbic acid content. The pH of aril juice in treated fruits was lower than that of non-treated fruits, probably due to higher titratable acidity. Total antioxidant activity and total phenolic content increased in treated fruits. In our study, a correlation was observed between total phenolic content and total antioxidant activity. Conclusion. The treatments applied in our experiments maintained overall quality of pomegranate fruits during long-term storage. Postharvest application of calcium and spermidine either alone or in combination could ameliorate adverse effects of low temperature on pomegranate fruit quality during cold storage. Vacuum infiltration was as effective as the normal dip method. However, normal dip is a simpler and faster treatment method.

The product. Fruit juices have attained an important place in the modern diets of people belonging to different communities and classes world over. It is the unfermented but fermentable liquid obtained from the edible part of sound, appropriately mature and fresh fruit. Bioactive compounds. Fruit juices contain nutrients like vitamins, minerals, trace elements, energy and phytochemicals including flavonoids, polyphenols and antioxidants that have been shown to have varied health benefits. Medicinal properties. The mode of action of these fruit juice compounds in most cases seems to be by modulating gene activities. Fruit juice as part of a balanced diet offers both good health and profound disease risk reduction properties. As a result, there is high demand as alternative medicine for different kinds of illnesses such as chronic inflammation, arthritis, diabetes, high blood pressure, muscle aches and pains, menstrual difficulties, headaches, heart disease, AIDS, cancers, gastric ulcers, sprains, mental depression, poor digestion, arteriosclerosis, blood vessel problems, and drug addiction. Furthermore, to identify fruit juices as non-consumable in the context of obesity and dental health would deprive the consumer of a perfectly healthy and nutritious food, and would be completely contrary to the evidence noted in the scientific community. Discussion and conclusion. Fruit juices are an excellent choice of drink when consumed moderately as per recommendations.

Introduction. Black plum (Vitexdoniana) is an indigenous fruit tree species importantfor the livelihoods of rural populations. Currently, there is renewednational and international interest in black plum, and it has emergedas a priority species for domestication in Africa. The present workaddressed farmers’ indigenous knowledge of the use and managementof the species among different socio-cultural groups in Benin, takinginto account gender differences. The specific objective of thiswork was to study the knowledge, uses, local gathering practices andmanagement systems of V. doniana that are partof the traditions of the communities in Southern Benin. Materialsand methods. A total of 150 participants randomly selected fromthree socio-cultural groups provided survey responses. Information collectedmainly referred to the motivation of respondents to conserve blackplum trees on their land, the local uses and the management practicesto improve the regeneration and production of the black plum. Resultsand discussion. The study showed that knowledge of black plumis well distributed in the community. However, people have differentinterests in using black plum and there is variable knowledge ofuse and management practices. The food and medicinal categorieswere the most important uses. There were no significant differencesin knowledge of the management and utility of black plum betweenmen and women, or across socio-cultural groups. Conclusion. Givenits value to the communities in southern Benin, black plum should beprioritized for domestication.

Introduction. Optimising agricultural water use implies thecombination of physiological, technological and engineering techniques, especially thosefor continuously monitoring the water status of plants subjected to deficit irrigation. Amethodology to estimate water stress of young almond trees from thermal images wasdeveloped based on assessing the physiological status of almond crops under limitedwater-supply conditions. Materials and methods. Two irrigation treatmentswere tested during the maximum evapotranspirative demand period (214th to the 243rd day ofthe year) in an experimental almond [Prunus dulcis (Mill) D.A. Webb, cv.Guara] orchard: a low-frequency deficit irrigation (LFDI) treatment, irrigated accordingto the plant-water status, and a fully irrigated treatment (C100) at 100% of cropevapotranspiration. Daily canopy temperature at midday (TC) was measured with an infraredcamera, together with standard measurements of stem-water potential (ΨStem) and stomatalconductance (gS). The time course of these parameters and their relationships wereanalysed. Results and discussion. The time course of the parameters studiedshowed highly significant correlations among the differentials of canopy-air temperature(ΔT), ΨStem and gS. The methodological protocol for analysing thermal images allowed atime saving in processing information and additionally offered the possibility ofestimating the ΨStem and gS values. Conclusion. Our results confirm thatinfrared thermography is a suitable technique for assessing the crop-water status and canbe used as an important step towards automated plant-water stress management in almondorchards.

Introduction. Sweet cherries are susceptible to postharvest decay. The use of synthetic fungicides is discouraged in postharvest handling because they can leave a residue and present a safety risk. Therefore, naturally occurring compounds have been considered as an alternative. Fumigation of short-chain organic acids and essential oils has shown promise in controlling fungal activities. This study reports their effects on sweet cherries. Materials and method. `Hedelfingen' sweet cherries (Prunus avium L.) were inoculated with conidia of Monilinia fructicola and Penicillium expansum, then fumigated with three levels of thymol or acetic acid for 10 min before cold storage. Results and discussion. After 13 d at 10°C, sweet cherries fumigated with 10 mg × L-1 of thymol significantly reduced brown rot from 21% to 12%, but had no effect on reducing blue mold rot. Fumigation with 6 or 10 mg × L-1 acetic acid significantly reduced blue mold rot from 16% to 2%, but had no effect on reducing brown rot. Fumigation did not have any effect on the firmness, total soluble solids and titratable acid of the sweet cherries. Fumigation with 2 or 6 mg × L-1 of thymol did not accelerate stem browning compared with the control, but fumigation with 10 mg Yen L-1 of thymol caused almost total stem browning. Fumigation with acetic acid showed no impact on discoloration of the stems. Conclusion. Thus, fumigation with acetic acid or thymol at low concentrations has a potential use for postharvest decay control without adverse effects on fruit quality.

Introduction The effect of temperature on the stability of three purified anthocyanin sources in a soft drink (pH 3, 10 °Brix) stored at (4, 20, 30 and 50) °C for 60 days was investigated. Materials and methods. Anthocyanins from Andean blackberries (Rubus glaucus Benth.), açai (Euterpe oleracea Mart.) and black carrot (Daucus carota L.) were purified and concentrated on a laboratory scale by adsorption to a styrene divinylbenzene copolymer. Two classical empirical approaches (Arrhenius and Ball models) were used to describe the thermal degradation kinetic of these three anthocyanins. Results. No degradation was detected during the refrigerated storage (4 °C). At all temperatures, the degradation rate constant (k) for black carrot anthocyanins was less than those in açai and blackberry (0.42  ×  10-2, 0.77  ×  10-2 and 1.08  ×  10-2).d-1 respectively, at 30 °C). Anthocyanins in black carrot degraded less rapidly than those in açai and Andean blackberry. The activation energy (Ea) for degradation of black carrot anthocyanins was (63.2  ±  4.3) kJ.mol-1, and (66.3  ±  2.7) kJ.mol-1 and (91.2  ±  0.4) kJ.mol-1 for açai and blackberry anthocyanins, respectively, at 20–50 °C. These higher Ea of blackberry anthocyanins as compared with those of black carrot and açai imply that a small temperature increase is sufficient to degrade them more rapidly. Conclusion. Our results clearly showed that anthocyanins from black carrot have a good stability during thermal storage (4 °C to 50 °C) with regard to blackberry and açai anthocyanins. Acylation of black carrot anthocyanins probably explains their greater stability. Acylated anthocyanins have shown to be promising alternatives to the use of synthetic dyes in drink systems

Introduction. Celtis australis L., Crataegus azarolus L., Crataegus monogyna Jacq., Elaeagnus angustifolia L. et Zizyphus lotus L. sont des arbres et arbustes fruitiers non conventionnels, très communs en Afrique et surtout en Algérie. Leurs fruits traditionnellement exploités sont sources de minéraux et vitamines qui pourraient constituer une matière première non négligeable pour l’alimentation. Ils sont consommés frais ou secs. L'objectif de notre travail a été de déterminer la composition minérale et vitaminique de ces fruits. Matériel et méthodes. Notre étude a porté sur une comparaison de ces fruits quant à leurs caractéristiques biométriques et à la teneur de leur portion comestible en composés vitaminiques et éléments minéraux. Résultats et discussion. La pulpe des cinq fruits étudiés s’est révélée plus riche en vitamines (tocophérol, carotène, vitamine C, thiamine B1) et en minéraux (calcium, magnésium, potassium, fer, manganèse ) que certains fruits plus largement consommés. La teneur de quelques oligo-éléments (zinc, cuivre) n’a pas dépassé le seuil de toxicité, indiquant que la consommation de ces fruits n’était pas préjudiciable à la santé publique. Conclusion. Les fruits analysés pourraient être source d’un apport nutritionnel important et être utilisés dans différents domaines : agroalimentaire, cosmétique, pharmaceutique et autres.

Introduction. Mature green vanilla pods accumulate 4-O-(3-methoxy-benzaldehyde)-β-D-glucoside (glucovanillin), which, upon hydrolysis by an endogenous β-glucosidase, liberates vanillin, the major aroma component of vanilla. Sites of storage of glucovanillin in the pod have been controversially reported for decades; we aim, using precise and widely accepted technical terminology, to clarify this controversy by providing an anatomical, histochemical and biochemical evidence-based picture of glucovanillin accumulation sites. The pod also synthesizes an oleoresin and a mucilage of unknown constitutions; we report here their localization and structures. Materials and methods. The pod anatomy was examined by light and epifluorescence microscopy. A protocol was established allowing fine hand-dissection of diverse anatomical parts of the pod (mesocarp, placentae, trichomes, intralocular interstitial cell-free region and seeds). Glucovanillin and γ-pyranones were extracted and analyzed by HPLC, while the structures of the mucilaginous polysaccharides were determined after permethylation. Results and discussion. Glucovanillin is essentially stored in the placentae (92%) and marginally in trichomes (7%); traces were measured in the mesocarp and intralocular interstitial cell-free medium. Trichomes store massive amounts of a fluorescing oleoresin (44%) rich in alkenylmethyldihydro-γ-pyranones and synthesize a mucilage made of a glucomannan and a pectic polysaccharide carrying monomeric arabinose and galactose side-chains. Conclusion. To date, the physiological roles of glucovanillin, long-chain pyranones, and mucilage remain unknown.

Introduction. The mangaba is an exotic fruit from the Brazilian Cerrado that presents high antioxidant activity and may benefit human health. Its antioxidant activity may be associated with the presence of bioactive compounds such as carotenoids and antioxidant vitamins. The physical and chemical characteristics, nutritional value, carotenoids and antioxidant vitamins were evaluated in mangaba from the Cerrado of Minas Gerais, Brazil. Materials and methods. Titratable acidity was determined by volumetric neutralization, pH by potentiometry, soluble solids by refractometry, moisture by gravimetry after oven drying, ash by calcination in a muffle furnace, proteins by the micro-Kjeldhal method, dietary fibers by the gravimetric non-enzymatic method and lipids by gravimetry after extraction in ethyl ether. Vitamin C (ascorbic and dehydroascorbic acids) and carotenoids (α-carotene, β-carotene, β-cryptoxanthin and lycopene) were analyzed by HPLC-DAD. Vitamin E (α-, β-, γ- and δ-tocopherols and tocotrienols) and folates (tetrahydrofolate, 5-methyltetrahydrofolate and 5-formyltetrahydrofolate) were analyzed by HPLC with fluorescence detection. Results and discussion. Mangaba showed a high pulp yield (80.08%), moisture (83.0 mg×100 g–1) and dietary fiber content (2.3 g×100 g–1). Mangaba presented β-carotene, β-cryptoxanthin, ascorbic acid, α-tocopherol; α-, β- and γ-tocotrienols; tetrahydrofolate, 5-methyltetrahydrofolate and 5-formyltetrahydrofolate, and it can be considered an excellent source of vitamin C (165.8 mg×100 g–1) and folates (98.3 μg×100 g–1). Carotenoid and vitamin E contents were 0.12 mg×100 g–1 and 2,732.5 μg×100 g–1, respectively. Conclusion. Mangaba presented a high pulp yield, and several carotenoids and antioxidant vitamins, and can be considered an excellent source of vitamin C and folates.

Introduction. Fruit fly attack on citrus causes economic yield losses in Nigeria. The high demand for sweet oranges in recent times necessitates the need to develop control strategies that can reduce fruit fly damage and ameliorate yield. This can be achieved by identifying the diversity, abundance and spread of major sweet orange fruit flies. Materials and methods. Surveys were conducted during the citrus fruit maturity periods of 2003 and 2006 in citrus-producing areas of Nigeria. Owners of the sampled orchards were interviewed on their cultural practices that could contribute to fruit fly abundance and spread. The fruit flies were sampled by using two types of trap; namely, the McPhail® trap with yeast hydrolysate bait and the yellow sticky trap impregnated with ammonium acetate. The traps were hung on the citrus trees at a distance of 1.8 m from the ground. The distance between trees was 25 m and the traps were replicated three times per site. Results and discussion. Fruit flies identified on citrus belonged to the genera Bactrocera, Ceratitis, Dacus and Trirhithrum. While higher fruit fly diversity was observed in Edo, Ogun and Oyo states in the rainforest ecological zone, relatively higher populations of major genera (Bactrocera and Ceratitis) were recorded in Benue and Kaduna states in the Guinea savanna ecological zone. Bactrocera species occurrence increased during the second sampling period. Some farmers’ cultural practices were implicated as factors likely to have contributed to fruit fly abundance and spread. Conclusion. Fruit fly species of economic importance to citrus in Nigeria belonged to the genera Ceratitis and Bactrocera species. These genera were observed in the majority of surveyed areas.

Introduction. The quantitative volatile compound composition of bananas (Musa acuminata, AAA group, Cavendish subgroup) was investigated in two different cultivars (Robusta and Grande Naine) grown at two different altitudes [(90 and 500) m], and ripened at two different maturity stages (color grades 5 and 7). Materials and methods. Volatile compounds were separated and identified by coupled capillary gas liquid chromatography / mass spectrometry. After evaluating changes in volatile composition during ripening, the effect of both growth altitude and cultivar was examined. Results and discussion. For a partially mature fruit, the growth altitude showed different effects on the two cultivars. The Robusta cv. exhibited a higher aroma volatile compound concentration at high altitude, while that of the Grande Naine cv. was higher at low altitude. At the fully mature stage, this difference still existed but was not so distinct. Conclusion. Whatever the ripening stage, Robusta cv. exhibited the highest aroma volatile compound concentration. Discriminate sensory analysis closely related to differences in the volatile composition of samples.

Introduction. Une étude a été réalisée pour évaluer la variabilité génétique d'une collection d'écotypes de figuier (Ficus carica L.) établie dans la région du Sahel, en Tunisie. Elle a été basée sur l'observation de caractères morphologiques relatifs au développement végétatif de l'arbre. Matériel et méthodes. Les mensurations de feuilles et rameaux de 17 écotypes de figuiers tunisiens ont été mesurées à raison de deux arbres échantillonnés par cultivar. Les résultats ont été soumis à une analyse de variance et à des analyses multivariées qui ont permis d'obtenir une matrice des corrélations entre caractères mesurés et une table des distances de Mahalanobis entre les écotypes. Résultats et discussion. La variabilité intracultivar s'est révélée très faible. En revanche, la diversité intercultivar apparaît très importante et cela indépendamment de l'origine géographique et du sexe de la plante. Conclusion. Quelques paramètres morphologiques ont permis de bien différencier les cultivars. Ils pourraient être utilisés comme descripteurs chez cette espèce.

Introduction. Brazil is home to a great diversity of tropical, non-traditional fruit species with a potential for consumption in natura and agroindustrial processing. The objective of our study was to evaluate the quality of 18 non-traditional fruits from Brazil belonging to the families Anacardiaceae, Apocynaceae, Arecaceae, Clusiaceae, Malpighiaceae, Melastomataceae and Myrtaceae. Materials and methods. Samples were collected from areas of occurrence, commercial orchards and collections in Northern, Northeastern and Southeastern Brazil; they were tested for total soluble solids (TSS), soluble sugars (SS), reducing sugars (RS), total titratable acidity (TTA), pH, [TSS / TTA] ratio, starch, total pectin (TP) and soluble pectin (SP). Results and discussion. Parameters varied greatly among the species. Thus, TSS was 4.75–37.07 °Brix; SS, 1.26–17.74%; RS, 2.53–9.92%; TTA, 0.20–2.64%; pH, 2.56–5.38; [TSS / TTA], 3.26–107.70; starch, 0.12–12.65%; TP, 0.15–1.27%; and SP, 0.04–1.49%. Conclusion. Many of the 18 fruits evaluated in this study show potential for consumption in natura and agroindustrial processing.

Introduction. In recent decades, there has been increased interest in developing natural non-caloric sweeteners, providing sensory properties similar to sucrose. One of the most promising alternatives is the steviol glycosides, high-sweetness compounds extracted from the leaves of Stevia rebaudiana Bertoni. Characteristics and properties. In this review article, the characteristics of this plant are described. According to the relevant literature data, this review provides insight into the major steviol glycosides as well as their main characteristics and properties. Toxicity and legislation. We describe the current situation on the toxicity and the legal framework of the above sweeteners. Extraction techniques. This review describes the techniques developed for extraction and purification, including conventional extraction with water/solvent, ion exchange, enzymatic extraction, supercritical fluid and with a focus on membrane filtration, for its proven advantages in the purification of aqueous extract obtained by leaching of the leaves. Applications. This review also presents various evidence relating to the implementation of steviol glycosides in the food industry, with an emphasis on their use in the formulation of fruit juices. Conclusions. Finally, the future prospects of these natural sweeteners are presented. They highlight the need for research in this area, and the great appeal and commercial potential of such compounds, which should be focused on continuous assessment in relation to issues such as the intensity, persistence of sweetness and the absence of other residual flavors, in order to ensure their acceptance, preference and choice by the general public.

Introduction. Different cultivars of lychee are produced all around the world and to date no information has been published on the nutritional value of cv. Tailandes, which is a new lychee cultivar introduced into Brazil and other tropical countries. Our study performed a pioneering evaluation of the physical and chemical characteristics, carotenoids, vitamins, and minerals in pulp of fruit of this cultivar. Materials and methods. Titratable acidity was determined by volumetric neutralization, pH by potentiometry, soluble solids by refractometry, moisture by gravimetry after oven drying, ash by calcination in a muffle furnace, proteins by the micro-Kjeldahl method, dietary fibers by the gravimetric non-enzymatic method and lipids by gravimetry after extraction in ethyl ether. Vitamin C (ascorbic and dehydroascorbic acids) and carotenoids (a-carotene, b-carotene, b-cryptoxanthin and lycopene) were analyzed by high-performance liquid chromatography (HPLC) with diode array detection, vitamin E (a-, b-, g- and d-tocopherols and tocotrienols) was analyzed by HPLC with fluorescence detection, and fourteen minerals were analyzed by atomic absorption spectrometry in inductively coupled plasma. Results and discussion. The lychee cv. Tailandes showed high pulp yield (59.0%), moisture (80.7 mg×100 g–1) and dietary fiber (2.2 g×100 g–1), and a low total energy value (70.2 kcal×100 g–1). It presented no carotenoids, but was an excellent source of vitamin C (34.7 mg×100 g–1). The total vitamin E content was 117.0 g×100 g–1. Pulp of lychee cv. Tailandes was shown to be a source of iron (0.86 mg×100 g–1) and magnesium (12.90 mg×100 g–1), a good source of copper (0.12 mg×100 g–1) and an excellent source of potassium (1067.33 mg×100 g–1). Conclusion. The lychee cv. Tailandes showed high pulp yield and low total energy. The pulp is a source of dietary fiber, vitamin C, iron, magnesium, copper and potassium.
