The feed efficiency of ruminant meat and dairy livestock can be significantly influenced by factors within their living environments. In particular, events perceived by the animals as stressful (such as parturition, transport or handling) have been found to affect susceptibility to infection. It has been well documented that even minor stress such as weighing can result in an increase in colonisation and faecal shedding of enteric pathogens such as Salmonella enterica and Escherichia coli O157:H7. Such infections affect both ruminant overall health and therefore performance, and are a particular problem for the meat production industries. Prior explanations for stress enhancing the likelihood of infection is that activation of the sympathetic nervous system under stress leads to the release of neuroendocrine mediators such as the catecholamine stress hormones noradrenaline and adrenaline, which may impair innate and adaptive immunity. More recently, however, another equally compelling explanation, viewed through the lens of the newly recognised microbiological discipline of microbial endocrinology is that the myriad of bacteria within the ruminant digestive tract are as responsive to the hormonal output of stress as the cells of their host. Work from our laboratories has shown that enteric pathogens have evolved systems for directly sensing stress hormones. We have demonstrated that even brief exposure of enteric pathogens to physiological concentrations of stress hormones can result in massive increases in growth and marked changes in expression of virulence factors such as adhesins and toxins. Happy, less stressed ruminants may therefore be better-nourished animals and safer sources of meat. This article reviews evidence that stress, as well as affecting nutrition, in ruminants is correlated with increased risk of enteric bacterial infections, and examines the molecular mechanisms that may be at work in both processes.

Operant conditioning was used to measure the effect on the feeding motivation (hunger) of pigs of diluting nutrient restricted food allowances with straw. Twelve Large White × Landrace boars were maintained in individual pens where they received their daily food allowance. Prior to the experiment, the boars were conditioned in separate rooms to press a panel so as to receive small rewards of food. The effect of diluting meal with straw on panel pressing was investigated in two trials. In trial 1, the boars were allocated to the following treatments: high (H) (3·5 of maintenance (A/)), low (L) (1·5 M) and low/straw (LS) (1·5 M + 0·15 times the dry weight of meal as chopped straw). This dilution increased the food volume by proportionately 0·29. Operant response rates were measured in six 1-h tests in each of two periods at the start (days 3 to 10, period 1) and at the end (days 20 to 28, period 2) of the 28-day experiment. In trial 2, nine of the above boars were allocated to the following treatments: high (H) (3·0 A/), low (L) (1·5 M) and low/straw (LS) (1·5 M + 0·30 the dry weight of meal as ground straw). This dilution increased the food volume by proportionately 0·75. Operant response rates were measured as above between days 10 to 17, following a 9-day adjustment period to the new regimes.

In both trials, operant response rate was strongly affected by treatment. Overall in trial 1, animals on the H treatment made few responses (mean 60 responses per session), animals on the L treatment made significantly more responses (mean 825, P < 0·001) and animals on the LS teatment significantly more responses yet again (1263, P < 0·05). This last difference was associated with the difficulty of the LS animals consuming all of the diluted diet during period 1. In trial 2, response rates were again higher on the L than on the H treatments. There was, however, no difference between the L and LS treatments (means: 60 v. 1035 v. 1200). Proportionately only 0·04 of the diet was refused during the period of testing.

The present results show that short-term satiety arising from gut distension does not reduce the feeding motivation of animals on chronic nutrient restriction. This suggests that hunger will remain high i n pigs on restricted food allowances, even when they have access to high fibre foods. This hunger will be a potential source of stress, particularly in housing systems involving physical restraint such as tether stalls.

In animal sciences, the number of published meta-analyses is increasing at a rate of 15% per year. This current review focuses on the good practices and the potential pitfalls in the conduct of meta-analyses in animal sciences, nutrition in particular. Once the study objectives have been defined, several key phases must be considered when doing a meta-analysis. First, as a principle of traceability, criteria used to select or discard publications should be clearly stated in a way that one could reproduce the final selection of data. Then, the coding phase, aiming to isolate specific experimental factors for an accurate graphical and statistical interpretation of the database, is discussed. Following this step, the study of the levels of independence of factors and of the degree of data balance of the meta-design represents an essential phase to ensure the validity of statistical processing. The consideration of the study effect as fixed or random must next be considered. It appears based on several examples that this choice does not generally have any influence on the conclusions of a meta-analysis when the number of experiments is sufficient.

The present study was conducted to determine the effect of growth rate of calves on the activity of the calpain system post mortem, post mortem desmin degradation, myofibrillar fragmentation index and meat tenderness of m. longissimus lumborum (LL) and m. supraspinatus (SS). Twenty-four Friesian heifer calves were allocated to two treatment groups: MM and HH. The MM calves were given food to achieve a moderate growth rate (678 g/day from 5 days of age to 90 kg body weight (BW) (period I) and 770 g/day from 90 kg BW to slaughter at 250 kg BW (period II)) and the HH calves were given food to achieve a high growth rate (period I: 895 g/day and period II: 1204 g/day). The myofibril fragmentation index (MFI), desmin degradation and the activity of µ-calpain, m-calpain and calpastatin were measured in LL and SS at slaughter, and 1 and 7 days post mortem. Shear force was measured in LL and SS after 1 and 7 days of ageing and a sensory panel evaluated the eating quality of the loin aged 7 days. MFI (P < 0·01) and tenderness (P < 0·01) were higher and shear force was lower (P < 0·001) in meat from HH calves compared with meat from MM calves. However, growth rate did not affect the activity of µ-calpain, m-calpain or calpastatin or the degradation pattern of desmin at any time post mortem. Besides growth rate and MFI at day 7 post mortem, which both correlated positively with meat tenderness (P < 0·001 and P < 0·01, respectively), fibre type traits and DNA or RNA concentrations were not generally related to final tenderness. Thus, it was concluded that increased growth rate of calves before slaughter increased the ease of fragmentation (MFI) of the meat and improved the tenderness but these findings could not be related to any changes in the activity of the calpain system.

In regions of intensive pig and dairy farming, nutrient losses to the environment at farm level are a source of concern for water and air quality. Dynamic models are useful tools to evaluate the effects of production strategies on nutrient flows and losses to the environment. This paper presents the development of a new whole-farm model upscaling dynamic models developed at the field or animal scale. The model, called MELODIE, is based on an original structure with interacting biotechnical and decisional modules. Indeed, it is supported by an ontology of production systems and the associated programming platform DIESE. The biotechnical module simulates the nutrient flows in the different animal, soil and crops and manure sub-models. The decision module relies on an annual optimization of cropping and spreading allocation plans, and on the flexible execution of activity plans for each simulated year. These plans are examined every day by an operational management sub-model and their application is context dependent. As a result, MELODIE dynamically simulates the flows of carbon, nitrogen, phosphorus, copper, zinc and water within the whole farm over the short and long-term considering both the farming system and its adaptation to climatic conditions. Therefore, it is possible to study both the spatial and temporal heterogeneity of the environmental risks, and to test changes of practices and innovative scenarios. This is illustrated with one example of simulation plan on dairy farms to interpret the Nitrogen farm-gate budget indicator. It shows that this indicator is able to reflect small differences in Nitrogen losses between different systems, but it can only be interpreted using a mobile average, not on a yearly basis. This example illustrates how MELODIE could be used to study the dynamic behaviour of the system and the dynamic of nutrient flows. Finally, MELODIE can also be used for comprehensive multi-criterion assessments, and it also constitutes a generic and evolving framework for virtual experimentation on animal farming systems.

Because of technical limitations, an impact of machine milking on the teat tissue cannot be avoided. The continuance of this impact during and after milking depends on a variety of factors related to the physiological regulation of milk ejection, as well as the different production systems and milking machine settings. Milking machine settings aim to achieve a high milking performance, that is, short machine-on time at a maximum of milk harvest. However, a high milking performance level is often related to an impact on the teat tissue caused by vacuum or liner compression that can lead to pathological dimensions of congestion of the tissue or hyperkeratosis as a long-term effect. Toward the end of milking a decrease of milk flow rate causes a raise of mouthpiece and teat end vacuum levels and hence an increase of the impact on the teat tissue and the risk of tissue damage. The mechanical stress by the milking machine activates a cascade of cellular mechanisms that lead to an excessive keratin growth and thickening of the keratin layer. Consequently, a complete closure of the teat canal is disabled and the risk of bacterial invasion and intramammary infection increases. Another consequence of high vacuum impact is fluid accumulation and congestion in the tissue of teat tip and teat basis because of an obstruction in venous return. The present review paper provides an overview of the available scientific information to describe the interaction between different levels and types of system vacuum, mouthpiece chamber vacuum, teat end (claw) vacuum, liner pressure, and the risk of short-term and long-term impacts on the teat tissue.

Agroecology uses natural processes and local resources rather than chemical inputs to ensure production while limiting the environmental footprint of livestock and crop production systems. Selecting to achieve a maximization of target production criteria has long proved detrimental to fitness traits. However, since the 1990s, developments in animal breeding have also focussed on animal robustness by balancing production and functional traits within overall breeding goals. We discuss here how an agroecological perspective should further shift breeding goals towards functional traits rather than production traits. Breeding for robustness aims to promote individual adaptive capacities by considering diverse selection criteria which include reproduction, animal health and welfare, and adaptation to rough feed resources, a warm climate or fluctuating environmental conditions. It requires the consideration of genotype×environment interactions in the prediction of breeding values. Animal performance must be evaluated in low-input systems in order to select those animals that are adapted to limiting conditions, including feed and water availability, climate variations and diseases. Finally, we argue that there is no single agroecological animal type, but animals with a variety of profiles that can meet the expectations of agroecology. The standardization of both animals and breeding conditions indeed appears contradictory to the agroecological paradigm that calls for an adaptation of animals to local opportunities and constraints in weakly artificialized systems tied to their physical environment.

The postural behaviour of a group of 12 pigs in a pen was studied whilst the air temperature was varied, all physical variables except pig weight being held constant. The air temperature was varied between −4°C and + 5°C of the theoretical lower critical temperature. The range of live weight was from 30kg to 75 kg. An indication of whether the pigs were above or below their lower critical temperature was obtained from the amount of huddling. Pigs of less than 45 kg live weight had a greater tendency to modify their environment by altering their posture. Measurements of floor-area covered showed that pigs over 50 kg live weight occupied an area approximately equal to the recommended minimum whilst smaller pigs occupied up to 20% less area than that recommended, depending upon the temperature: this was due to the tendency of smaller pigs to lie on top of each other when cold.

The effects of dietary energy level and added fat were studied by comparative slaughter on 60 primiparous rabbit does in different reproductive states. Nine does were slaughtered immediately after their first parturition (preliminary slaughter group) to estimate initial empty body composition. The 51 remaining does were divided into three groups and given diets differing in digestible energy (DE) content: M (11·28 MJ/kg dry matter (DM); H (12·16 MJ/kg DM); F (11·93 MJ/kg DM, obtained by the inclusion of 25 g/kg of animal fat). Thirty-six does (12 per group) were remated 3 to 4 days after parturition, after which 20 does were concurrently pregnant and lactating (LP) and gave birth a second time. At the second parturition these does were slaughtered with their new-born litters. The non-mated or non-pregnant lactating does (LN) were slaughtered at the same time. All litters from the first parturition were weaned at the 30th day of age.

The diets influenced the DE intake (3·11 v. 3·31 and 3·36 MJ/day, P < 0·05) and the milk production (171 v. 180 v. 191 glday, P < 0·05), respectively for the M, H and F diets. The high-energy diets (H and F) significantly modified the final empty body composition. The loss of body fat was proportionately 0·34, 0·36 and 0·39 of the initial body fat and the loss of energy was proportionately 0·17, 0·19 and 0·21 of the initial body energy in the M, H and F groups respectively (P > 0·05) (average of LP and LN does). The maternal diet significantly influenced the weight of the sucking litters (first parturition) at 20 days (2409 and 2454 v. 2629 g, P < 0·05).

The LP does showed lower DE intake, milk yield (from 10 to 30 days) and litter weaning weights than LN does. Between the first and the second parturition, the LP does had a loss of empty body weight and a negative protein balance (-0·06 of the initial content), while the LN does had an increase in live weight and empty body weight and a positive protein balance (+0·11 of the initial content). Both LP and LN does had a negative energy balance (−0·24 v. −0·25, respectively; P < 0·01).

The aim of the present study was to investigate the effect of feeding strategy on the performance of oral stereotypies, such as tongue-rolling and bar-biting, and other behaviours in lactating dairy cows. Thirty–seven cows of the Swedish Red and Wliite breed were randomly assigned into three treatments with different feeding strategies. Cows in treatment (AL) were given food ad libitum during the whole experimental period, which lasted from weeks 3 to 26 post partum. The second group (AL–R) was given food ad libitum during weeks 3 to 14 post partum, thereafter they were given food at a restricted level. The third group (R) was given food at a restricted level during the whole experiment period. All cows were offered a total mixed ration consisting of 650 g concentrate and 350 g forage per kg twice a day and their individual daily food intakes were registered. Behavioural recordings were made for 4 h on a fixed day every 2nd week, where each individual cow was observed every 2nd minute.

During the complete experimental period, 27 out of the 37 cows showed stereotypies; 13 cows in group R, 10 in group AL–R and four in the AL group. The proportions of cows showing stereotypies were not independent of feeding treatment within the respective periods (P < 0·01). The stereotypy levels, counted as the mean frequency of recordings per treatment period, increased significantly between period 1 (lactation weeks 3 to 14) and period 2 (weeks 17 to 26) in group AL–R (P < 0·01) and in group R(P < 0·01), but not in the AL group. In period 2 the R cows had significantly higher stereotypy levels than the cows in the AL–R group (P < 0·01). Group R decreased the time spent eating between the periods (P < 0·001), with the same tendency in group AL–R. The AL group had longer eating time in period 2 than the AL–R (P < 0–001) and the R (P < 0·001) cows. The AL cows had a higher frequency of rumination than the other treatments in period 2 (P < 0·01). Both the AL–R and the R cows increased their activity levels between the periods (P < 0·001 for both). There were also differences between treatments in period 2, where the AL cows were less active than the AL–R (P < 0·05) and the R cows (P < 0·01).

It is concluded that oral stereotypies in dairy cows are highly affected by feeding strategy, where restrictive feeding of a mixed food induces significant increases of stereotypies. The results of this investigation clearly indicate that restricted feeding of a diet with high levels of concentrate has a negative effect on the well being of lactating cows.

Effects of synchronising the availability of amino acids and glucose within a day on protein and energy metabolism were studied in growing pigs. Ten pigs of on average 54 (s.e. 1.0) kg live weight were assigned to each of two dietary treatments (synchronous v. asynchronous nutrient supply) in a change-over design. On the synchronous treatment (SYN), pigs received two balanced meals: one at 0800 h and one at 1600 h. On the asynchronous treatment (ASYN), pigs received virtually all protein at 0800 h and all carbohydrates at 1600 h. The dietary supply of ingredients and nutrients to pigs was similar for both treatments. Pigs were housed individually in respiration chambers. Faecal apparent nutrient digestibility was determined and nitrogen and energy balances were measured. Faecal apparent digestibility of energy, organic matter and non-starch polysaccharides was higher ( P < 0.05) for SYN than for ASYN. The efficiency of utilisation of digestible protein with protein gain was higher ( P = 0.001) for SYN (56.7%) than for ASYN (47.1%). The substantial decrease ( P < 0.05) in respiratory quotient and 13C enrichment of the expired CO2 after the morning meal indicated higher amino acid oxidation for ASYN than for SYN. Heat production and energy retention as fat were not affected by nutrient synchrony. In conclusion, an asynchronous availability of glucose and amino acids within a day increases amino acid oxidation, resulting in a substantial reduction in protein utilisation but with virtually no effect on fat retention.

In Chile, cow carcasses present the highest bruise prevalence compared with other cattle categories; however, the causes of the bruises are frequently unknown. In this study, 52 cull cows were transported to the slaughterhouse in three batches under identical transport conditions. A combination of direct observation and video analyses was used to determine moment, pre-slaughter stage and cause of potential bruising events during the period from loading on the farm until stunning at the slaughterhouse. After slaughter, number of bruises, location on the carcass and characteristics of the bruises were assessed. Seventy-eight bruises were observed on 37 carcasses. Fifty-two bruises were linked back to their causal event. Results showed that 46% of these bruises were a result of interactions between animal and facility, and most of them were inflicted in the stunning box, 27% of the bruises originated from animal–animal interactions and were mostly inflicted during lairage, another 27% was a result of human–animal interactions and were mostly inflicted during loading and unloading of animals. The percentages of potential bruising events resulting in a bruise were 43%, 9% and less than 1% for animal–facility, human–animal and animal–animal interactions, respectively. Most bruises on the back site were inflicted when the animal was in the stunning box (91.2%), whereas bruises on the pin site were mostly (75%) inflicted during loading at the farm. One may conclude that in relative short journeys (⩽4 h) directly from farm to the slaughterhouse and long lairage times (>12 h), most bruises are the result of circumstances at the slaughterhouse. A substantial amount of these bruises could be avoided by proper animal handling and adequate stunning facilities.

The first objective of this experiment was to investigate the effect of using different bacterial isolates on the estimation of microbial protein production in semi-continuous fermenters (RUSITEC) given four diets, and to test whether a ‘mixed’ bacterial pellet was representative of the whole bacterial population in the fermenters. A second objective was to compare two different microbial markers (nitrogen-fifteen (15N) and purine bases (PB)). Diets consisted of neutral-detergent fibre from grass hay (10 g/day) and sugar-beet pulp (2 g/day) and 280 mg/day of one of four N forms (isolated soya-bean protein, soya-bean peptides, amino acids blended to profile soya-bean protein and NH4Cl). Two 14-day incubation runs were carried out and in each run each of the four different diets were given to two vessels. On days 12 and 13, total digesta (effluent plus nylon bags residues) was collected for analyses of non-ammonia N, 15N enrichment and PB concentration, and for isolation of total mixed bacterial pellets (TB). On the last day of each incubation run, the system was stopped for isolation of liquid- (LAB) and solid-associated (SAB) bacteria. Microbial N flow was estimated from the 15N enrichment and PB concentration in both total digesta and in the three different bacterial pellets (TB, LAB, and SAB). For all diets, LAB presented a greater (P < 005) 15N enrichment and PB: N ratio than SAB, with TB having an intermediate value. For both markers, the use of LAB produced the lowest (P < 005) estimates of microbial N flow and the use of SAB produced the greatest (P < 005) estimates. The use of TB produced intermediate values with all diets, suggesting that TB consisted of SAB and LAB. For all bacterial pellets, PB produced greater (P 005) values of microbial N flow than 15N. However, there was a positive relationship (r = 0·883; P 0001; no. = 15) between the values of microbial N flow determined with the two markers when TB were used as reference.

The effects of duration of fasting on the short-term feeding behaviour of 12 grazing and 12 silage-fed lactating Holstein-Friesian dairy cows were examined. Four groups of three cows were rotated around fasting treatments of 1, 3, 6 or 13 h following a balanced Latin-square design. Herbage intakes for each treatment group were assessed over al-h period.

As intended there were no significant differences in sward characteristics between the experimental plots grazed by cows from different treatment groups. However, total dry-matter (DM) intake, biting rate and DM intake per bite, measured over the 1-h grazing period, increased significantly when the duration offasting was extended from 1 to 6 or 13 h (P < 0·05). There were only minor differences in grazing behaviour following fasting durations ofl and 3, or 6 and 13 h.

In a parallel study, undertaken to assess the influence offasting duration on appetite independently of grazing, four groups of three cows were housed indoors and offered 30 kg of a high quality grass silage. Silage DM intakes, measured over a 1-h period, increased significantly with extended fasting periods (P < 0·01), though silage DM intake was considerably lower than that of grazing cows for each fasting treatment.

These results suggest that dairy cows grazing on good quality swards may be able to compensate for increased degree of hunger by increasing both biting rate and DM intake per bite to increase DM intake rate. Although the DM intakes of silage and grazed grass followed similar patterns of increasing intake with extended fasting duration, DM intake rates were considerably higher in grazing cows for each fasting treatment.

1. Records used to compile the Contemporary Comparisons of 57 Friesian, 8 English Ayrshire and 11 Scottish Ayrshire A.I. bulls, each with at least 100 ‘effective daughters’ were analysed.

2. For each bull, the herd-years were divided into three equal groups on the basis of the average heifer yield of both daughters and contemporaries (high-, medium-, and low-producing herd-years) and three independent Contemporary Comparisons were calculated for each bull, one at each of the three yield levels.

3. In the data from England and Wales, the mean Contemporary Comparison declined with increasing mean level of production. This decline was such as to imply that some 20% of the differences in production between herds were genetic in origin. A possible explanation lies in the gradual change from Dairy Shorthorn to Friesian and Ayrshire which has taken place in England and Wales, but not in Scotland, during the last 15 years.

4. The variance within progeny groups within herd-years increased from the low level to the high but the coefficient of variation decreased slightly. The variance between sires also increased with the mean level of production but almost exactly in parallel with that within sires so that the heritability and consequently the accuracy of the progeny test for milk yield was effectively the same at all production levels.

5. The correlation between the true breeding values of the bulls at the different levels was very close to one.

6. From these results it is concluded that there is no need to provide special strains within breeds to suit particular management levels or to concentrate progeny testing in the higher-producing herds and that daughter records from all herds, irrespective of level of production, can be used with equal confidence.

The objective of this study was to determine if a moderate or high reduction of dietary CP, supplemented with indispensable amino acids (IAA), would affect growth, intestinal morphology and immunological parameters of pigs. A total of 40 barrows (initial BW=13.50±0.50 kg, 45±2 day of age) were used in a completely randomized block design, and allocated to four dietary treatments containing CP levels at 20.00%, 17.16%, 15.30% and 13.90%, respectively. Industrial AA were added to meet the IAA requirements of pigs. After 4-week feeding, blood and tissue samples were obtained from pigs. The results showed that reducing dietary CP level decreased average daily gain, plasma urea nitrogen concentration and relative organ weights of liver and pancreas (P<0.01), and increased feed conversion ratio (P<0.01). Pigs fed the 13.90% CP diet had significantly lower growth performance than that of pigs fed higher CP at 20.00%, 17.16% or 15.30%. Moreover, reducing dietary CP level decreased villous height in duodenum (P<0.01) and crypt depth in duodenum, jejunum and ileum (P<0.01). The reduction in the dietary CP level increased plasma concentrations of methionine, alanine (P<0.01) and lysine (P<0.05), and decreased arginine (P<0.05). Intriguingly, reducing dietary CP level from 20.00% to 13.90% resulted in a significant decrease in plasma concentration of IgG (P<0.05), percentage of CD3+T cells of the peripheral blood (P<0.01), also down-regulated the mRNA abundance of innate immunity-related genes on toll-like receptor 4, myeloid differentiation factor 88 (P<0.01) and nuclear factor kappa B (P<0.05) in the ileum. These results indicate that reducing dietary CP level from 20.00% to 15.30%, supplemented with IAA, had no significant effect on growth performance and had a limited effect on immunological parameters. However, a further reduction of dietary CP level up to 13.90% would lead to poor growth performance and organ development, associated with the modifications of intestinal morphology and immune function.

The influence of sex on the meat quality of Lacha (L) and Rasa Aragonesa (RA) lambs was studied. Male and female L lambs were given ewes' milk and were slaughtered at 25 and 24 days of age corresponding to 11·4 and 10·9 kg live weight (LW), respectively. Male and female RA lambs were weaned at 58 days (16·0 kg LW) and then given concentrate and barley straw until slaughter at 89 and 91 days of age, corresponding to 24·5 and 23·1 kg LW, respectively. The parameters measured on the carcasses were: hot carcass weight, cold carcass weight, conformation, colour, firmness and thickness of dorsal fat and colour of muscle rectus abdominis. Parameters measured on longissimus dorsi muscle were: ultimate pH (pHu), instrumental colour (L*, a*, b*), myoglobin concentration, ash, crude protein, fat, moisture and water-holding capacity (WHC). Iodine value and fatty acid composition were studied in the intramuscular (IM), intermuscular (IN) and subcutaneous (SC) fat depots. Females of both breeds had higher amount of IM fat (P < 0·001 and P < 0·05 for L and RA breeds, respectively) and firmer SC fat than males (P < 0·05). There were no differences between sexes in pHu, myoglobin concentration, WHC and the L*, a* and b* colour parameters. No significant differences between sexes were observed in the total saturated fatty acids, total unsaturated fatty acids and in the iodine value in the three fat depots studied in both breeds. However, the females of the breed had significantly higher proportions offatty acids with 15 carbon atoms (pentadecanoic (C15:0)) and with 16 carbon atoms (palmitic (C16:0)and palmitoleic (C16:1)) than the males in the three depots. The females of Rasa Aragonesa breed had a higher proportion of palmitoleic acid (C16:1)in the IM depot (P < 0·001) and of palmitic acid (C16:0)in the SC depot (P < 0·05) than the males. The absence of significant differences in the unsaturated fatty acid content between males and females showed that at the low slaughter weight, sex had no effect on the nature and composition of fat.

Mixed crop–livestock (MC–L) farming has gained broad consensus as an economically and environmentally sustainable farming system. Working on a Charolais-area suckler cattle farms network, we subdivided the 66 farms of a constant sample, for 2 years (2010 and 2011), into four groups: (i) ‘specialized conventional livestock farms’ (100% grassland-based farms (GF), n=7); (ii) ‘integrated conventional crop–livestock farms’ (specialized farms that only market animal products but that grow cereal crops on-farm for animal feed, n=31); (iii) ‘mixed conventional crop–livestock farms’ (farms that sell beef and cereal crops to market, n=21); and (iv) organic farms (n=7). We analyse the differences in structure and in drivers of technical, economic and environmental performances. The figures for all the farms over 2 years (2010 and 2011) were pooled into a single sample for each group. The farms that sell crops alongside beef miss out on potential economies of scale. These farms are bigger than specialized beef farms (with or without on-farm feed crops) and all types of farms show comparable economic performances. The big MC–L farms make heavier and consequently less efficient use of inputs. This use of less efficient inputs also weakens their environmental performances. This subpopulation of suckler cattle farms appears unable to translate a MC–L strategy into economies of scope. Organic farms most efficiently exploit the diversity of herd feed resources, thus positioning organic agriculture as a prototype MC–L system meeting the core principles of agroecology.

The objective of this study was to investigate the effect of different body condition score (BCS) at 30 days before calving (−30 days) induced by a differential nutritional management from −100 days until −30 days on productive parameters, the interval to first ovulation and blood parameters in primiparous and multiparous Holstein cows under grazing conditions until 60 days post partum. The experimental arrangement was a randomized complete block design, where cows were blocked according to BW and expected calving date and then randomly assigned to different nutritional treatments from –100 to –30 days relative to calving to induce different BCS. As the assignment of cows to treatments was random, cows had to lose, maintain or gain BCS; thus, different planes of nutrition were offered with approximately 7, 14 or 20 kg dry matter per day. The BCS score was assessed every 15 days and animals were reassigned in order to achieve the desired BCS at –30 days. Only animals that responded to nutritional treatment were considered and this was defined as follows: primiparous and multiparous high cows (PH and MH) had to gain 0.5 points of BCS, primiparous low (PL) had to lose 0.5 points of BCS and multiparous low (ML) had to maintain BCS at least in two subsequent observations from −100 to −30 days. From −30 days to calving, primiparous and multiparous cows (P and M cows) were managed separately and cows were offered a diet once a day. From calving to 60 days post partum, cows of different groups grazed in separate plots a second year pasture. Cows were also supplemented individually with whole-plant maize silage and commercial concentrate. Cows had similar BCS at −100 days and differed after the nutritional treatment; however, all groups presented similar BCS at 21 days post partum. The daily milk production and milk yield at 60 days post partum was higher in M than P cows. The percentage of milk fat was higher in PH cows compared with PL cows. Concentrations of non-esterified fatty acids (NEFA) were affected by the BCS at −30 days within parity, and in PH cows the concentration of NEFA was higher than in PL cows. The concentrations of total protein were higher in M cows. A lower probability of cycling was found in PL than in PH cows (P < 0.05) and in ML than in MH cows (P < 0.05). Treatment affected various endocrine/metabolic profiles according to parity, suggesting that the metabolic reserves signal the productive/reproductive axis so as to induce a differential nutrient partitioning in adult v. first-calving cows.

Pig intestinal epithelium undergoes a complete renewal every 2 to 3 days that is driven by intestinal stem cells (ISCs) located at the crypt base in their niche. Intestinal stem cells generate a pool of highly proliferative transit-amplifying cells, which either migrate up the villus and differentiate into enterocytes and secretory cells or migrate towards the base of the crypt where they differentiate into Paneth cells that secrete antimicrobial peptides. The balance between ISCs’ self-renewal and differentiation controls intestinal epithelial homeostasis; therefore, ISCs are essential for ensuring intestinal epithelial integrity. Detailed knowledge of these mechanisms in pig and other domestic species is very limited. Therefore, the aim of this work was to characterize ISC from birth to weaning. We analysed the duodenum, jejunum and colon of six piglets at birth, 6-day-old nursing piglets and 28-day-old weanlings, one week after weaning. We immunolocalized homeobox only protein+ (HOPX) and sex-determining region Y-box 9+ (SOX9) cells that identify quiescent and active ISC, respectively. The volume of ISCs was quantified with stereological methods and was compared to that of mitotic cells expressing proliferating cell nuclear antigen and apoptotic cells identified by the presence of cleaved caspase-3. Furthermore, we compared all these values with crypts and villi measurements and their ratio. Our results indicated that both quiescent and active ISCs are present in pig intestine from birth to weaning and are localized in the crypts of the small and large intestine. However, both markers were also observed along the villi and on the colon luminal epithelium, suggesting that at these stages, pig mucosa is still immature. Weaning induced a dramatic reduction of both HOPX+ and SOX9+ cells, but SOX9+ cells underwent a significantly greater reduction in the small intestine than in the colon. This suggests that the two ISC types are differentially regulated along the intestinal tracts. Overall, the pig ISC complex has many similarities with its murine counterpart, but also has some differences. These include active ISC not showing the typical columnar base morphology as well as the absence of bona fide Paneth cells. This is the first description of ISC dynamics during pig’s early life and provides useful reference data for future studies, aimed at targeting ISC for the development of efficient alternatives to in-feed antibiotics for preserving intestinal integrity.
