Three methanogen 16S rRNA gene clone libraries were constructed from liquid (LM), solid (SM) and epithelium (EM) fractions taken from the rumen of Jinnan cattle in China. After the amplification by PCR using methanogen-specific primers Met86F and Met1340R, equal quantities of PCR products from the same fractions from each of the four cattle were mixed together and used to construct the three libraries. Sequence analysis showed that the 268 LM clones were divided into 35 phylotypes with 18 sequences of phylotypes affiliated with the genus Methanobrevibacter (84.3% of clones). The 135 SM clones were divided into 19 phylotypes with 11 phylotypes affiliated with the genus Methanobrevibacter (77.8%). The 267 EM clones were divided into 33 phylotypes with 15 phylotypes affiliated with the genus Methanobrevibacter (77.2%). Clones closely related to Methanomicrobium mobile and Methanobrevibacter wolinii were only found in the LM library, and those to Methanobrevibacter ruminantium and Methanobrevibacter gottschalkii only in the SM library. LM library comprised 12.4% unidentified euryarchaeal clones, SM library 23.7% and EM library 25.5%, respectively. Five phylotypes (accession number: EF055528 and EF055531–EF055534) did not belong to the Euryarchaeota sequences we had known. One possible new genus (represented by phylotype E17, accession number EF055528) belonging to Methanobacteriaceae was identified from EM library. Quantitative real-time PCR for the first time revealed that epithelium fraction had significantly higher density of methanogens, with methanogenic mcrA gene copies (9.95 log 10 (copies per gram of wet weight)) than solid (9.26, P < 0.01) and the liquid (8.44, P < 0.001). The three clone libraries also appeared different in Shannon index (EM library 2.12, LM library 2.05 and SM library 1.73). Our results showed that there were apparent differences in the methanogenic diversity and abundance in the three different fractions within the rumen of Jinnan cattle, with Methanobrevibacter species predominant in all the three libraries and with epithelium fraction having more unknown species and higher density of methanogens.

Four male pigs (Duroc × Landrace × Yorkshire; average initial (mean ± SEM) BW = 22.5 ± 1.1 kg), fitted with permanent catheters in the portal vein, ileal vein and carotid artery, were used in a 4 × 4 Latin square experimental design to measure the effect of dietary starch sources on the net portal appearance of glucose and amino acids. Dietary starch sources were resistant starch (RS), maize, sticky rice and brown rice. Diets were provided at 0730, 1530 and 2330 h during a 6-day adjustment period and 1-day collection period. On day 7 of each period, blood samples were collected from the portal vein and carotid artery at 0730 h (prior to feeding) and hourly up to 8 h after meal. Blood samples were used to determine glucose, amino acid, packed cell volume and partial pressure of oxygen (pO2). When calculated per 100 g feed intake, cumulative portal glucose appearance was lower (P < 0.05) for resistant starch than for maize, sticky rice or brown rice up to 8 h after the meal. Cumulative portal glucose appearance was higher (P < 0.05) for sticky rice and brown rice than for other diets until 4 h after the meal, but maize had higher cumulative glucose appearance after 4 h. Net cumulative portal concentrations of most amino acids for resistant starch were also reduced (P < 0.05) than for the other starch sources. Cumulative portal appearance of amino acid represented 48.39%, 63.76%, 61.80% and 59.18% of dietary intake for resistant starch, maize, sticky rice and brown rice, respectively. Collectively, our results indicate that dietary starch sources substantially affect the appearance of amino acids and glucose in the portal circulation.

Analyses of variance were conducted on first lactation milk, fat and protein production records in England and Wales of daughters of British Friesian sires. Herds were split on milk yield into high and low levels of mean production and, in subsequent analyses, into high and low levels of within herd variance and coefficient of variation using all first lactation records. Data were then extracted on daughters of 798 young sires undergoing progeny test and on 118 widely used proven sires to generate connections. Least squares analyses were conducted within levels and genetic correlations estimated from the covariance of sire effects. W ith data split on mean yield, the heritability of milk yield was 0·24 at the low level and 0·30 at the high level, that of log transformed yield being 0·25 and 0·35 respectively.

With data split on variance the corresponding figures were 0·24, 0·30, 0·27 and 0·36 respectively, and when split on coefficient of variation, 0·22,0·26,0·26 and 0·32. There were similar increases for fat and protein yield, proportionately smaller increases for fat and protein content.

Genetic correlations were close to 1·0 between high and low levels for all traits on all criteria of data splitting. As a consequence progeny testing of bulls is rather more accurate at high mean or variance of production levels and data can be combined optimally without scaling. Cows of the highest predicted value using an index will be found in high variance herds.

The Gompertz is one of a family of growth functions that, when the environment (e.g. food, housing) is non-limiting, provides a useful description of growth as a comparatively simple, single equation. It has three parameters of which the important ones are mature size, A, and the rate parameter, B. Estimates of A and B, however, are highly correlated and defining their separate values for individual animals is problematic. This problem was explored using five methods for estimating the parameters, or transformations of them, to describe the growth of two genotypes of Suffolk sheep kept under non-limiting conditions. One genotype was under selection for high lean growth rate and the other was its control. Live weights that were collected at least fortnightly from near birth to 150 days of age over a 9-year period on 1934 lambs were used. The Gompertz form adequately described the growth of the great majority of the lambs evaluated. When considering A and B as a lumped parameter, Z = A·B, and fitting Z, B and an initial condition (a transformed birth weight) as the parameters, the problems in estimation were substantially overcome as shown by a low correlation of Z with estimates of B both within and across animals. Usefully Z has a biological interpretation in that Z/e is the maximum daily growth rate. Since the Gompertz form adequately described growth in these sheep, the extent of genetic co-variation for the growth parameters values (A, B, Z) was estimated to determine if they were amenable to selection. A weighted univariate animal model was fitted. Mature size, A, and the rate parameter, B, were moderately heritable (0·37 (s.e. 0·04) and 0·38 (s.e. 0·05), respectively) as was live weight at 150 days of age (0·31 (s.e. 0·06)). However there was a substantial negative genetic relationship between A and B (–0·48). Z was highly heritable (0·72 (s.e.0·05)). After 9 years of selection, the genotype selected for high lean growth rate was heavier (P < 0·001) at 150 days of age (5·2 kg) and at maturity (6·6 kg), with a maximum growth rate (Z/e) that was 1·12 times that of the control. Our lumped parameter Z, in effect a rate parameter scaled for mature size, avoided problems in estimating A and B and, in so doing, offers a general and robust description of lamb growth amenable to selection.

The dry-matter degradation of 19 varieties of barley, 14 varieties of wheat, 11 varieties of oats and one variety of triticale straws, both untreated and ammonia treated were studied using the nylon-bag technique. There were significant differences between the untreated varieties of all the types of cereal straw studied with respect to dry-matter loss (DML) values. When the barley and wheat straws were treated with ammonia, the differences between the varieties were also significant although ammonia treatment tended to improve those with lower values to a greater extent than those with higher values. There were also significant differences between the DML values of the oat straws when they were treated with ammonia but only after 48-h incubation. There was a significant negative relationship between the 48-h DML values of the untreated oat straws and the improvement in the DML values with ammonia treatment (r = −0·65; P < 0·05). Grain yield, straw length and nitrogen concentration had no significant relationship with the DML values of the untreated straws. Barley and oat straws had generally higher DML than the wheat and triticale straws.

1. Two experiments were conducted to examine the effects of a cereal-based supplement and herbage mass on the intake and performance by Border Leicester × Scottish Blackface ewes nursing twin lambs in early lactation.

2. In one experiment 16 ewes, individually penned, were given one of four amounts of supplement (0, 320, 640 and 960 g organic matter per ewe per day) and offered ad libitum freshly-cut perennial ryegrass herbage (organic-matter digestibility 82%). Intake of herbage and total organic matter digestibility declined linearly with increasing intake of supplement (0·84 g organic matter of herbage per g organic matter of supplement and 0·50 percentage units per 100 g organic matter of supplement respectively).

3. In the second experiment three amounts of supplement (0, 480 and 960 g organic matter per ewe per day) were offered individually to groups of seven ewes grazing a perennial ryegrass sward of high digestibility, maintained at herbage masses of either 500 or 750 kg organic matter per ha. A further group of seven unsupplemented ewes were grazed on the same sward maintained at 1500 kg organic matter per ha. Intakes of herbage and digestible organic matter by ewes, and lamb live-weight gain, were all significantly greater and ewe live-weight loss significantly less at herbage masses of 750 and 1500 tha n at 500 kg organic matter per ha (P <0·05). The mean decline in herbage intake was 0·93g organic matter per g organic matter supplement consumed. Amount of supplement had no significant effect on lamb live-weight gain at either weight of herbage nor on ewe live-weight loss at the 750 kg organic matter per ha herbage mass. At 500 kg organic matter per ha herbage mass, intake of digestible organic matter was significantly greater and ewe live-weight loss was significantly less for 960 than for 0 and 480 g organic matter per day amounts of supplement (P <0·05).

We estimated the genetic parameters related to feed intake (FI), feed efficiency traits (including feed conversion ratio (FCR) and residual feed intake (RFI) of digestible crude protein (DCP) and total digestible nutrients (TDN)), beef marbling score (BMS), melting point of fat (MP) and fatty acid composition. Fat and meat (Musculus trapezius) samples were taken from the carcasses of 863 Japanese Black steers derived from 65 sires, for determination of the MP and fatty acid composition of the total lipid in intramuscular adipose tissue. Genetic parameters were estimated using uni- and bivariate animal models. In addition, pedigree information for 4841 animals was used. Heritability estimates for BMS, MP, individual fatty acids, monounsaturated fatty acids (MUFA), the ratio of saturated fatty acids to MUFA (MUS) and the ratio of elongation (ELONG) were generally high. The FI values of TDN and DCP were also high, but FCRs and RFIs of those were low (0.09 to 0.22). Genetic correlation of BMS with MP was −0.34 (favorable) and with C18:1, MUFA, MUS and ELONG values were 0.40, 0.28, 0.29 and 0.37, respectively (favorable). Genetic correlations of MP with C18:1, MUFA, MUS and ELONG were negative (also favorable) and high (−0.85, −0.98, −1.00 (−0.996) and −0.66, respectively). The correlation estimates for feed efficiency traits of DCP were quite similar to those of TDN. Genetic correlations of BMS with FCRs and RFIs of TDN and DCP were all positive (unfavorable; 0.21 to 0.51), and in particular, the correlations with RFIs of those were high. The correlations of C18:1, MUFA, MUS and ELONG with RFIs of TDN and DCP were positive (unfavorable) but low (0.06 to 0.17), whereas the corresponding correlations with FCRs of those were all negative (favorable; −0.38 to −0.10). These results suggest that the quantity and quality of beef fat can be simultaneously improved and that the quality of beef fat (fatty acid composition) can be improved directly or indirectly with MP. Furthermore, selecting MP or fatty acid traits does not significantly affect feed efficiency.

There are numerous recent studies highlighting sustainability problems for the development of ruminant production systems (RPS) while facing increasing human food necessities and global climate change. Despite the complexity of the context, in our view the main objectives of the ruminants’ physiologist should be convergent for both industrialized (IC) and developing countries (DC) in a common and global strategy of advancing knowledge. In DC, this means improving the efficiency of RPS, taking into account the unique possibility of using rangelands. For IC settings, RPS should be revisited in terms of autonomy and environment- friendly feeding and managing practices. Assuming that competition for feed/food use is still a crucial criterion, future ruminant feeding systems (FeSyst) should preferably focus on lignocellulosic sources. According to biome distributions, and the recent increases in volumes of crop residues and their by-products, the annually renewed volumes of these biomasses are considerable. Therefore, we need to redesign our strategies for their efficient utilization at the local level. For this purpose, digestion processes and rumen functioning need to be better understood. The renewed vision of ruminal digestion through the reduction of greenhouse gas emissions is also a key aspect as it is an environmental demand that cannot be ignored. With regard to other ruminants’ physiological functions, accumulated knowledge could be mobilized into an integrative approach that puts forward the adaptive capacities of animals to face variability in quantity and quality of supplied feeds. Basically, the reduction of inputs that were traditionally used to ensure FeSyst will need more flexible animals. In that sense, the concepts of homeostasis and teleophorhesis need to be updated and adapted to domestic species and breeds that were until now largely excluded from the dominant productive systems. In conclusion, a more holistic approach of research targets is required in which physiological functions and farmers’ practices must converge and respond to each particular situation in an integral, dynamic and flexible conceptual perspective. From a scientific point of view, both for ICs and DCs, a broader range of experimental scenarios should be explored in order to arrive at innovative practices and solutions that respect environmental, ethical and economical issues. The clear challenge is to in evaluate the sustainability of RPSs. This includes, in our opinion, a strong interaction with other disciplines (multi- and trans-disciplinary conception), thus structuring new relevant indicators for the evaluation sustainability.

Although there may be task-specific differences in performance between wild and domestic animals, there is no evidence for any generally reduced cognitive capacity in domestic animals. It is not possible to compare intelligence between species or breeds without recognizing the contribution of differences in attention and motivation, and domestic animals often perform better on learning tasks than wild animals because they are less fearful. Considerable flexibility and complexity in behaviour can arise from context-specific decisions that may not require learning. Examples include alarm calling and maternal behaviour in chickens. However, the majority of intelligent behaviour shown by farm animals is dominated by learned associations, sometimes in response to remarkably subtle cues. Seemingly straightforward learning abilities may result in surprising emergent properties. An understanding of these properties may enable us to investigate how farm animals interact socially, and whether they form concepts. Other abilities, such as imitation and the re-organization of spatial information, do not appear to depend on associative learning. The study offarm animal cognition tells us little about the issue of animal consciousness but, none the less, plays an important role in the animal welfare debate. The types of cognitive abilities animals have provide clues as to the types of situations in which (given the benefit of the doubt) they might suffer.

Human activities produce polluting compounds such as persistent organic pollutants (POPs), which may interact with agriculture. These molecules have raised concern about the risk of transfer through the food chain via the animal product. POPs are characterised by a strong persistence in the environment, a high volatility and a lipophilicity, which lead to their accumulation in fat tissues. These compounds are listed in international conventions to organise the information about their potential toxicity for humans and the environment. The aim of this paper is to synthesise current information on dairy ruminant exposure to POPs and the risk of their transfer to milk. Three major groups of POPs have been considered: the polychlorinated dibenzo-p-dioxins and dibenzofurans (PCDD/Fs), the polychlorobiphenyls (PCBs) and the polycyclic aromatic hydrocarbons (PAHs). The results show that contamination of fodder and soil by these compounds is observed when they are exposed to emission sources (steelworks, cementworks, waste incinerators or motorways) compared with remote areas. In general, soil contamination is considered higher than plant contamination. Highest concentrations of POPs in soil may be close to 1000 ng/kg dry matter (DM) for PCDD/Fs, to 10 000 mg/kg DM for PAHs and 100 μg/kg DM for PCBs. The contamination of milk by POPs depends on environmental factors, factors related to the rearing system (fodder and potentially contaminated soil, stage of lactation, medical state of the herd) and of the characteristics of the contaminants. Transfer rates to milk have been established: for PCBs the rate of transfer varies from 5% to 90%, for PCDD/Fs from 1% to 40% and for PAHs from 0.5% to 8%. The differential transfer of the compounds towards milk is related to the hydrophobicity of the pollutants as well as to the metabolic susceptibility of the compounds.

Intensifying concerns about the use of antimicrobials in meat and poultry production has enhanced interest in the application of prebiotics, probiotics and enzymes to enhance growth and prevent disease in food animals. Growth-promoting antibiotics enhance growth of animals by reducing the load of bacteria in the intestine, by reducing colonization by intestinal pathogens or by enhancing the growth and/or metabolism of beneficial bacteria in the intestine. Recently, molecular ecology, utilizing DNA-sequence heterogeneity of the 16S rRNA gene, has revealed a surprising diversity of uncharacterized bacteria inhabiting this ecosystem. We used this approach to determine the effect of growth-promoting antibiotics on the development and composition of the ileal bacterial community. Pairwise comparisons, correspondence analysis and community diversity indices revealed significant differences among the treatments (bacitracin/virginiamycin or monensin) and controls. Antibiotics reduced the diversity of the ileal bacterial community and induced communities rich in Clostridia throughout the life of the broiler chicken. These results indicate that some bacterial species, such as lactobacilli, were suppressed and also suggest that many intestinal Clostridia may be non-pathogenic. Future studies should focus on characterizing the important bacterial species needed to stabilize the intestinal microbiota and identifying those commensals that stimulate and enhance development of intestinal function.

Data on individually recorded silage dry-matter intake (SDMI), concentrate dry-matter intake (CDMI) and live weight of steers and data on silage composition including toluene dry matter (TDM), pH, total nitrogen (N), ammonia nitrogen (NH3-N), volatile fatty acids (VFAs), digestible organic matter in the dry matter (DOMD) and neutral-detergent fibre (NDF) obtained from experiments conducted at three sites were used to obtain simple and multiple linear regressions of SDMI on other variables.

Live weight accounted for a high proportion of the variation in intake but this effect could generally be removed by scaling intake by live weight raised to the power of 0·75 (M0·75). CDMI was the most important factor affecting scaled intake in mixed diets. TDM, NH,-N and VFAs all had important effects on SDMI. The relationship of SDMI with TDM was curvilinear suggesting that there is little to be gained in intake terms from wilting to TDM above 250 g/kg. The effect of NH3-N appeared to be related more to its correlation with VFAs than with any other nitrogenous constituent while the VFAs appeared to have a direct effect on SDMI. The effects of N and pH on SDMI were generally small. DOMD and NDF had relatively little effect on SDMI. Significant differences in intercepts between sites were found for most relationships although common slopes were often found.

Predictive frameworks for performance under both physical and social stressors are available, but no general framework yet exists for predicting the performance of animals exposed to pathogens. The aim of this paper was to identify the key problems that would need to be solved to achieve this. Challenges of a range of hosts by a range of pathogens were reviewed to consider reductions in growth beyond those associated with reductions in voluntary food intake (VFI). Pair-feeding and marginal response studies identified the extent and mechanisms of how further reductions in growth occur beyond those caused by reduced VFI. Further reductions in growth depended on the pathogen, the host and the dose and were time dependent. In some instances the reduction in VFI fully explained the reduction in growth. Marginal response experiments showed increased maintenance requirements during exposure to pathogens, but these were different for specific amino acids. There were no clear effects on marginal efficiency. Innate immune functions, repair of damaged tissue and expression of acquired immunity caused significant but variable increases in protein (amino acid) requirements. More resistant genotypes had greater requirements for mounting immune responses. The partitioning of protein (amino acids) was found to be different during pathogen challenges. Prediction of the requirements and partitioning of amino acids between growth and immune functions appears to be a crucial problem to solve in order to predict performance during pathogen challenges of different kinds and doses. The problems of accounting for reductions in performance during pathogen challenges that are described here provide a useful starting point for future modelling and experimental solutions.

In fish, in vitro fertilization is an important reproductive tool used as first step for application of others biotechniques as chromosome and embryo manipulation. In this study, we aimed to optimize gamete quality and their short-term storage from the yellowtail tetra Astyanax altiparanae, for future application in laboratory studies. Working with sperm, we evaluated the effects of spawning inducers (carp pituitary gland and Ovopel® [(D-Ala6, Pro9-NEt) – mGnRH+metoclopramide]) and the presence of female on sperm motility. Additionally, we developed new procedures for short-term storage of sperm and oocytes. Briefly, sperm motility was higher when male fish were treated with carp pituitary gland (73.1±4.0%) or Ovopel® (79.5±5.5%) when compared with the control group treated with 0.9% NaCl (55.6±27.2%; P=0.1598). Maintenance of male fish with an ovulating female fish also improved sperm motility (74.4±7.4%) when compared with untreated male fish (42.1±26.1%; P=0.0018). Storage of sperm was optimized in modified Ringer solution, in which the sperm was kept motile for 18 days at 2.5°C. The addition of antibiotics or oxygen decreased sperm motility, but partial change of supernatant and the combination of those conditions improve storage ability of sperm. Fertilization ability of oocytes decreased significantly after storage for 30, 60 90 and 120 min at 5, 10, 15 and 20°C when compared with fresh oocytes (P=0.0471), but considering only the stored samples, the optimum temperature was 15°C. Those data describe new approaches to improve semen quality and gametes short-term storage in yellowtail tetra A. altiparanae and open new possibilities in vitro fertilization.

Primary growths of perennial ryegrass (Lolium perenne) were cut on 22 May and 12 June and wilted for 24 h prior to ensiling. A 40: 60 mixture of the two silages was offered ad libitum with two pelleted supplements. Supplement Ba was a mixture of (dry matter (DM) basis) 932 g rolled barley and 68 g fish meal per kg. Supplement SBP/FF consisted of 555 g unmolassed beet pulp, 314 g extracted rice bran, 56 g fat prills and 75 g soya-bean meal per kg. The factorial combination of the two supplements (Ba and SBP/FF) given at two levels, 6 kg DM (L) or 12 kg DM (H), provided the four treatments imposed over weeks 3 to 10 of lactation on 40 British Friesian cows. During weeks 12 to 20 of lactation (post-experiment period) the cows were given an equal mixture of the two concentrates at 9 kg DM per day.

Supplement Ba contained less ash (31 v. 94 g/kg), acid-detergent fibre (68 v. 218 g/kg) and fat (29 v. 77 g/kg) but more starch (558 v. 89 g/kg) and digestible organic matter in the dry matter in vitro (DOMD) (781 v. 627 g/kg) than SBP/FF. The concentration of total nitrogen (N) was similar at 25·6 g/kg. Silage had a DOMD of 643 g/kg, a pH of 3·8 and proportionately 0·82 of fermentation acids as lactic acid.

Apparent digestibility of gross energy was higher for Ba diets (0·748) than for SBP/FF (0·704). Cows given SBP/FF ate 0·9 kg more silage DM than those given Ba (P < 0·01) but there was no difference in digestible energy intake or in substitution rate (−0·37 kg silage DM per kg additional supplement DM). Increasing the amount of supplement increased milk yield by 3·9 kg/day (P < 0·001). Cows given SBP/FF yielded on average 1·6 kg more milk than those given Ba (P < 0·05). However, this increased output consisted almost entirely of lactose and water as a result of a high concentration of fat in the milk of cows given Ba at the low level (46·3 g/kg). Further, the concentration of protein was less with SBP/FF (28·0 g/kg) than with Ba (29·2 g/kg).

The effects of SBP/FF in early lactation were translated into a positive residual effect in mid lactation equivalent to the immediate effect. In contrast, raising yield by increasing the amount of supplement did not result in increased output subsequently. The results show that a supplement of fibre and fat despite having a lower digestibility than barley can produce more milk but a similar yield of fat and protein provided silage is offered ad libitum.

A crossbreeding trial extending over three generations was used to investigate the genetic components contributing to the prolificacy of the Meishan breed in comparison with the Large White breed. Information on the number of teats and on body weight and litter size in the first two parities was recorded on purebred Meishan and Large White females and on reciprocal F1 and backcross females. Ovulation rate was also recorded for all litters, allowing the estimation of per litter prenatal survival. Crossbreeding parameters for direct, maternal and grandmaternal effects were estimated using restricted maximum likelihood analysis. There was a consistent advantage of three to four piglets born alive to the Meishan female compared with the Large White female. This was controlled by the maternal genotype, with no effect of the genotype of the litter itself. Both additive and heterosis effects were important, the contribution of additive maternal effects to the breed difference being similar across parities (4·0 (s.e. 1·1) and 4·2(s.e. 1·1), in the two parities respectively) and the maternal heterosis increasing slightly across parities (2·2 (s.e. 0·8) and 2·9 (s.e. 0·8), in the two parities respectively). The number born alive to F 1 females was similar to, or greater than, the number born alive to Meishan females. Ovulation rate was significantly higher in Meishan than in Large White females and this was controlled by additive gene effects which had a similar effect across parities, the weighted average of their contribution to the breed difference being 5·7 (s.e. 0·8) ova. Differences between the breeds in prenatal survival were small, although there was significant maternal heterosis, however, the maternal additive effect became significant after the inclusion of ovulation rate as a covariate. After adjustment for ovulation rate, the weighted average estimates across parity of the maternal additive contribution to the breed difference and the maternal heterosis for the proportional prenatal survival loere 0-14 (s.e. 0·05) and 0·13 (s.e. 0·03), respectively. This suggests that a combination of a high ovulation rate and especially a high level of prenatal survival for that ovulation rate led to the prolificacy observed in this sample of Meishan pigs. The inclusion of ovulation rate as a covariate in the analysis of number born alive confirms this view, as the maternal additive effect on litter size was only reduced by about one third and the heterosis effect was largely unchanged. Both numbers stillborn and mummified were increased in litters born to Meishan sows due to maternal additive effects, but the effects seemed largely a consequence of the increased ovulation rate as they became non-significant after its inclusion as a covariate in the model.

In recent years, it has become increasingly clear that understanding nutrient partitioning is central to a much broader range of issues than just being able to predict productive outputs. The extent to which nutrients are partitioned to other functions such as health and reproduction is clearly important, as are the efficiency consequences of nutrient partitioning. Further, with increasing environmental variability, there is a greater need to be able to predict the ability of an animal to respond to the nutritional limitations that arise from the environment in which it is placed. How the animal partitions its nutrients when resources are limited, or imbalanced, is a major component of its ability to cope, that is, its robustness. There is mounting evidence that reliance on body reserves is increased and that robustness of dairy cows is reduced by selection for increased milk production. A key element for predicting the partition of nutrients in this wider context is to incorporate the priorities of the animal, that is, an explicit recognition of the role of both the cow's genotype (genetic make-up), and the expression of this genotype through time on nutrient partitioning. Accordingly, there has been a growing recognition of the need to incorporate in nutritional models these innate driving forces that alter nutrient partitioning according to physiological state, the genetically driven trajectories. This paper summarizes some of the work carried out to extend nutritional models to incorporate these trajectories, the genetic effects on them, as well as how these factors affect the homeostatic capacity of the animal. At present, there are models capable of predicting the partition of nutrients throughout lactation for cows of differing milk production potentials. Information concerning genotype and stage of lactation effects on homeostatic capacity has not yet been explicitly included in metabolic models that predict nutrient partition, although recent results suggest that this is achievable. These developments have greatly extended the generality of nutrient partitioning models with respect to the type of animal and its physiological state. However, these models remain very largely focussed on predicting partition between productive outputs and body reserves and, for the most part, remain research models, although substantial progress has been made towards developing models that can be applied in the field. The challenge of linking prediction of nutrient partitioning to its consequences on health, reproduction and longevity, although widely recognized, is only now beginning to be addressed. This is an important perspective for future work on nutrient partitioning.

Automated feeding systems for dairy cows offer the benefits of ‘little and often’ feeding. Published data were collected and analysed to establish the extent of such benefits. Twenty-three publications reporting the results of 35 experiments were examined. Several statistically significant positive responses indicated that milk fat concentration, and to a lesser extent yield of milk, could sometimes be increased by increasing the feeding frequency. However, for ail experiments the average proportional increases (± s.e.) in milk fat concentration and milk yield were fairly small at 7·3 (± 3·3) % and 2·7 (± 1·3) %, respectively. The responses of milk fat concentration and milk yield were apparently correlated (r = 0·43, s.e. = 0·20), and the mean proportional response of milk fat yield was 8·3 (± 3·1) %. There was no evidence that milk protein concentration, lactose concentration or changes in body weight were affected by changes in feeding frequency. Increases in food intake were sufficient to explain some, but not all, instances of increased milk fat production. All statistically significant responses to increased feeding frequency occurred when the milk fat concentration was originally depressed, milk fat depression generally being due to feeding pelleted or highly concentrated diets. Increases in milk fat concentration through increased feeding frequency were generally insufficient to bring the milk fat concentration up to a commercially acceptable level. All statistically significant responses were observed on moving from one or two to three or more meals per day, but the possibility of further responses beyond four meals per day could not be ruled out. It was concluded that cows producing milk of commercially acceptable milk fat concentrations were unlikely to benefit from increased feeding frequency.

The objective of the study was to investigate the influence of amino acid-deficient diets and high dietary leucine levels offered for intervals of either 21 or 35 days pre-slaughter on the intramuscular fat content of pig muscle. Twenty-four hybrid gilts were offered individually ad libitum one of four diets that comprised combinations of amino acid levels (supplemented or deficient: 5·6 v. 4·0 g lysine per kg) and low or high leucine levels (10·3 v. 30·3 g leucine per kg). Live weights at the start of the study were 74·5 and 87·0 kg for pigs on the 35- and 21-day feeding regimens, respectively. There were no significant effects of dietary amino acid level, leucine level, or feeding interval on food intake, daily live-weight gain or food efficiency. Pigs given the amino acid-deficient diets had lower killing-out proportions (736 v. 747 (s.e. 3·4) g/kg; P < 0·05) and longissimus dorsi muscle areas (32·6 v. 35·7 (s.e. 0·71) cm2, P < 0·01) than those given amino acid-supplemented diets. Subjective score for longissimus dorsi colour indicated that pigs on the high leucine diet had darker muscle than those on the low leucine diet. Intramuscular fat contents of the longissimus dors i muscle at the Wth/llth rib and the 3rd/4th lumbar vertebra and of the semimembranosu s muscle were increased by 19, 18 and 18 g/kg, respectively (P < 0·05), for pigs given amino acid-deficient compared with those given amino acid-supplemented diets. Dietary leucine level had no significant effect on intramuscular fat level. Pigs given the diets for 35, compared with 21, days had higher fat levels in the semimembranosu s muscle (52 v. 30 (s.e. 5·2) g/kg; P < 0·01) but not in the other two muscle locations studied. This study suggests that relatively short-term feeding of amino acid-deficient diets can produce substantial increases in intramuscular fat levels.

Since 1968, the Meat and Livestock Commission has been carrying out a considerable amount of tissue separation work on samples of cattle and sheep arising from its livestock improvement schemes. The purpose of this work has been to provide data on variation in carcass composition of these animals to relate to variation in production characteristics. From the point of view of the meat market, it is important when fast growing sires are selected for use, particularly by AI, that they should be known to be capable of producing offspring which, under normal feeding conditions, are no fatter than the mass market requires. The latter is known to favour the lean end of the fatness range, although there is still a market for fatter carcasses which are believed to have superior eating characteristics, but may require fat to be trimmed from them before and after they reach the plate. In order to describe market requirements more clearly than at present, the data being collected on variation in carcass composition and its prediction are being used to develop carcass classification schemes for cattle and sheep.
