Summary
Chapter 7 concludes the book by discussing the implications of a long-term view of oil and wine. These include the dynamic stability of both commodities as determined by shared values and the construction of elite identity, as well as the development of oil and wine into cultural commodities and as markers of Greek identity. Chapter 7 ends with a discussion of the implications of this study for modern oil and wine production in Greece as the Mediterranean faces new climate and social stresses.
