Factors affecting muscle growth and meat quality in pigs

The understanding of growth and development of skeletal muscle is one of the most important goals in animal and meat science. The major component of a given muscle is the constituent muscle fibres. Muscle mass is therefore largely determined by the number of muscle fibres and the size of those fibres.
